1 cup granulated sugar
1 cup brown sugar
7 very ripe bananas, mashed
2 teaspoons vanilla extract
4 eggs
3 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
1 1/2 tablespoons cinnamon (approximate)
3 tablespoons sugar (for sprinkling)

Steps:

  • Grease and flour two 9x5 loaf pans. Set aside.
  • Mash bananas with vanilla in a medium bowl. Set aside.
  • Combine flour, salt, and baking soda in another medium bowl. Set aside.
  • Cream the butter and sugars. Beat on high 3-5 minutes, until very light and fluffy.

2 mashed large bananas
1/3 C vegetable oil
1 tsp vanilla extract

1/4 C granulated sugar
1 tsp ground cinnamon

  • 1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper. Set aside. 2. In a medium bowl, mix together flour, baking soda, salt and cinnamon. 3. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top. Bake for 50-60 minutes, but remember, if you're using a different-sized loaf pan, be careful and keep a close eyeball on it!
