CLAMS WITH SAUSAGE AND PEPPERS OVER RICE PILAF

Clams with Sausage and Peppers over Rice Pilaf image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 22

2 tablespoons unsalted butter
2 tablespoons olive oil
2 cloves garlic, minced
1 small yellow onion, minced
Kosher salt
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon freshly grated nutmeg
2 cups long-grain white rice, like basmati
1 fresh bay leaf
2 cups chicken stock
4 cloves garlic, sliced
3 bell peppers (red, orange or yellow), sliced
1 medium red onion, sliced
2 pounds fresh middleneck clams
1 pound smoked sausage, sliced into 1/2-inch-thick pieces
1 cup chicken stock
4 ounces white wine
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Fresh cilantro leaves, for serving
Olive oil, for serving

Steps:

  • Prepare a grill for medium heat. If using a charcoal grill, build an even layer of hot coals on the bottom.
  • For the rice pilaf: Melt the butter and olive oil in a large ovenproof pot or Dutch oven. Add the garlic and onions with a pinch of salt and cook, stirring occasionally, until the onions are softened, 3 to 5 minutes. Add the coriander, cumin and nutmeg and continue to cook to toast the spices, 2 to 3 minutes. Add the rice, stirring to coat, and toast, about 2 minutes. Add the bay leaf and chicken stock. Bring to a gentle boil then season with salt and cover the pot. Cover the grill and cook until the rice is cooked and all the liquid is gone, about 18 minutes.
  • Meanwhile, prepare the foil packets for the clams with sausage and peppers: Lay out a double layer of large heavy-duty aluminum foil pieces in an X formation, totaling 2 packets. Distribute the garlic, peppers and onions evenly between the packets. Top each with the clams and sausage. Bring up all 4 sides of the foil, but don't seal. Divide the stock, wine and butter between each packet. Season with salt and pepper. Tightly seal the foil.
  • Remove the rice from the grill, remove the lid and fluff with a fork. Place a kitchen towel over the pot and place the lid of the pot back over the kitchen towel. Let sit for 10 minutes without opening. This will help absorb the moisture in the pot so the rice is fluffy and not mushy.
  • Remove the ring from the grill if it has one so the coals are exposed and place the packets directly onto the coals. Steam until the clams open and everything is heated through, 7 to 8 minutes.
  • When ready to serve, transfer the rice pilaf to a serving plate. Carefully open the foil packets and pour everything over the rice pilaf, making sure to get all the juices from the packets. Sprinkle with cilantro leaves, drizzle with some olive oil and serve!
  • (Alternatively, you can cook the rice pilaf in a 350 degrees F oven for 18 minutes and bake the clams with sausage and peppers foil packets in a 375 degrees F oven for 8 to 10 minutes.)

SEATTLE'S BEST CLAM CHOWDER

Seattle's Best Clam Chowder image

I kinda picked up this recipe when I first started out as a cold pantry cook. I worked at this place called The Brooklyn in Seattle. Now having never made the chowder, but only prepped certain components, I built this recipe in my head based off what I saw and tasted every day. You may be thinking, "I have never heard of Seattle Clam Chowder. Only New England and Manhattan chowders." Well let me tell you, that in Seattle, downtown restaurants live and die by their chowder. This is a recreation of one of the best I have tried and or made. Oh, one other thing. This recipe is a scaled down version of my recipe from back when I was the Sous Chef at a hotel. Sometimes scaling down a huge bulk recipe doesn't convert just right, so you may need to adjust some seasoning to your own taste, and check out any restaurant supply places that are open to the public if you have trouble finding the clam base. Good Luck and enjoy. New edit. reduced salt and white pepper. Edit again. So I finally got around to making this in my home kitchen. It turned out great. You can find the clam base online. I think I bought a tub of it from Amazon. Use Minor's brand. This second edit is to scale it back to a more reasonable level. Who really needs almost 3 gallons of chowder? In the end I think you'll find that the trouble to get a hold of the clam base and to track down that much clam juice and canned clams will pay off in the end. You'll have a great chowder that you can sub out the clams, clam base and juice and make a chicken corn chowder. Or whatever you feel like.

Time 1h10m

Yield 21 8oz bowls

Number Of Ingredients 14

1 leek, chopped and rinsed
1/2 cup celery, chopped and rinsed
1 1/2 lbs red potatoes, diced
1 quart clam juice
8 (10 ounce) cans baby clams (with the juice)
2 ounces clam base
1 teaspoon kosher salt
8 ounces blond roux (by weight)
1 quart heavy cream
1/2 ounce dried thyme
1/2 lb bacon (peppered is nice)
1/2 cup red onion, diced
1 teaspoon kosher salt
1/2 teaspoon white pepper

Steps:

  • Dice up bacon into small pieces and render in a large stock pot over med-low heat.
  • Once bacon has started to turn brown, add the onions and sprinkle with the 1 oz of salt.
  • Once the onions get soft and start to turn brown, add the leaks and celery, turn up the heat to med-high and sauté for a couple of minutes until they get tender.
  • Add the potatoes, clam base, chopped clams, clam juice, and the thyme.
  • Bring to a low simmer, and maintain the simmer until the potatoes are cooked.
  • Add the heavy cream and bring to a gentle boil.
  • When it starts to boil, add the roux 2 oz at a time, letting the chowder come back to a boil before adding more roux. Make sure you are stirring the entire time here.
  • When all the roux is added or the chowder reaches the thickness you like, add the remaining salt and pepper to your taste.
  • Please taste it before you add any additional seasoning. Don't add it all just because it lists it in the ingredients. I put the numbers in because I had to and I don't remember just how much to add.
  • I recommend serving with some good thick sliced sourdough bread and a few drops of green Tabasco sauce.

Tips:

  • Fresh Seafood: Always opt for fresh clams over canned or frozen ones. Fresh clams will impart a more intense and authentic flavor to your chowder.
  • Right Type of Sausage: Italian sausage is the most popular choice for clam chowder, but you can also use chorizo or smoked sausage for a different flavor profile.
  • Sautéing Vegetables: Don't skip sautéing the vegetables. This step enhances their flavor and adds depth to the chowder.
  • Stock vs. Water: Use a combination of clam juice and chicken or vegetable stock instead of just water. This will give the chowder a richer, more flavorful broth.
  • Fresh Herbs: Add fresh herbs like thyme, oregano, and bay leaves to infuse the chowder with aromatic flavors.
  • Seasoning: Don't be shy with the seasoning. Taste the chowder and adjust the salt, pepper, and other seasonings to your preference.
  • Thicken the Chowder: If you prefer a thicker chowder, add a cornstarch or flour slurry towards the end of cooking.
  • Serve with Love: Clam and sausage chowder is best served hot with crusty bread or crackers for dipping.

Conclusion:

Clam and sausage chowder is a classic New England comfort food that's easy to make and enjoyed by people of all ages. With its creamy, flavorful broth, tender clams, and savory sausage, this chowder is sure to warm your heart and soul on a chilly day. So next time you're craving a hearty and satisfying meal, give this clam and sausage chowder recipe a try. You won't be disappointed!
