4 thin slices red onion
1 plum (Roma) tomato, cut into 8 slices

Steps:

2 slices Italian bread
1 tablespoon pesto
2 slices mozzarella cheese
¼ pound sliced cooked chicken breast

Steps:

  • Preheat an electric grill (such as George Foreman®) for medium heat. Spread olive oil on one side of each bread slice.
  • Place one slice of bread, oil-side down, on the preheated grill. Spread 1/2 of the pesto on the bread and put a slice of mozzarella cheese over top. 3 1/2 lbs chicken, roasted
1 large red pepper
1 large yellow pepper
1 cup pitted black olives
1 cup arugula leaf
6 hoagie rolls
1 tablespoon olive oil
4 tablespoons olive oil
2 tablespoons honey
1/2 lemon, juice of
1 tablespoon chopped herbs
salt and pepper

  • Strip chicken meat from bones and cut into bite-sized strips.
