Steps:

1 quart buttermilk
2 teaspoons hot sauce
1 bay leaf
3 cloves garlic, smashed
3 sprigs thyme
3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sweet paprika
1 tablespoon onion powder
3/4 teaspoon cayenne pepper
Peanut or vegetable oil, for frying
Vegetable shortening, for frying

Steps:

  • Season the chicken generously with salt and black pepper; place on a baking sheet, cover loosely with plastic wrap and refrigerate 1 hour.

1 cup buttermilk
2 cups all-purpose flour for coating

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well.
