1 pound roasted cherry tomatoes
1 or 2 roasted chilies (Serrano,jalapeño or Thai bird) to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup fresh squeezed lemon juice
2 tablespoons fresh squeezed lime juice

Steps:

  • Combine the tomato juice, roasted cherry tomatoes, roasted peppers, garlic powder, onion powder, lemon and lime juices in a heavy duty blender. Process until completely smooth, then working in batches push the mixture with the back of a spoon through a wire-mesh strainer into a large pitcher. Discard the solids as you work. Can be made ahead, kept covered and refrigerated, up to 10 days. Makes about 6 cups.

¾ cup spicy tomato-vegetable juice cocktail (e.g., V-8)

13 pounds tomatoes
4 large yellow onions, sliced
1 bunch celery, cut into pieces
12 sprigs parsley
2 green peppers, cored and cut into pieces
1/4 cup salt
1 tablespoon sugar
1 teaspoon peppercorn
1/2 teaspoon dried basil, if desired OR
2 bay leaves and 1 teaspoon whole cloves

Steps:

  • Wash tomatoes, but do not peel. Cut into pieces, add other ingredients and simmer 30 minutes. Strain the mixture, return to the pot and bring to a boil. While bringing to a boil the second time, get your bottles ready. Place clean glass jars in a large pot of boiling water to keep warm until you are ready (or you could put them in your dishwasher on rinse) and place lids in a small saucepan to simmer. Fill jars leaving 1/2 inch of headspace, use a small spatula to run around the inside edge of the bottle to get out all air bubbles. Fill with additional juice is necessary. Wipe the rim and top with a lid and screw on cap until finger tight. Process in a water bath for 35 minutes (adjusting for altitude).
