Place clean glass jars in a large pot of boiling water to keep warm until you are ready (or you could put them in your dishwasher on rinse) and place lids in a small saucepan to simmer. Fill jars leaving 1/2 inch of headspace, use a small spatula to run around the inside edge of the bottle to get out all air bubbles. Fill with additional juice is necessary. Wipe the rim and top with a lid and screw on cap until finger tight. Process in a water bath for 35 minutes (adjusting for altitude).
