Steps:
- Whisk the egg yolks and 2 tablespoons coffee liqueur in a medium bowl. Whisk the milk, granulated sugar, cocoa powder, cornstarch and salt in a medium saucepan until smooth. Bring to a simmer over medium heat, whisking occasionally, until slightly thickened, about 8 minutes. Remove from the heat and whisk about 1/2 cup of the hot milk mixture into the beaten eggs, then whisk the egg mixture into the remaining milk in the pan. Cook over medium heat, whisking, until thickened, about 5 minutes (the whisk should leave a thick trail when dragged). Remove from the heat. Add the chopped chocolate and whisk until smooth, then whisk in the butter and 1 teaspoon vanilla.
- Divide the pudding among 4 ramekins or small bowls. Place a piece of plastic wrap directly on the surface of each and refrigerate until set, at least 4 hours or overnight.
- Whisk the heavy cream with the confectioners' sugar in a medium bowl until soft peaks form. Add the remaining 1 tablespoon coffee liqueur and 1/2 teaspoon vanilla and whisk until combined. Top the pudding with the whipped cream and chocolate-covered espresso beans.

Steps:
- In a medium bowl, whisk together the flour, cocoa powder, sugar, and salt. Press through a sieve into a medium saucepan to eliminate any lumps. Whisk in the milk.
- Over medium heat, stir the mixture until thickened, about 2 1/2 minutes. Be sure to get the spoon around the edges of the pan as the mixture thickens. Whisk if needed to combine well. Stir in the butter.
- Whisk 1 tablespoon of the hot chocolate mixture into the beaten egg and return to the pudding in the pan. Stir in the vanilla and cook to completely thicken, 2 to 3 more minutes. Strain through a sieve and pour the pudding into four to six 6-ounce pudding cups. Serve warm, or cool first and chill until serving. Press plastic wrap directly on the surface of the pudding to prevent it from forming a skin (unless you like it!). Top with a dollop of whipped cream, if desired.
Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your pudding will taste. Use real cocoa powder, not a cocoa mix, and use whole milk or cream for a richer flavor.
- Don't overcook the pudding: Overcooked pudding will be thick and rubbery. Cook it just until it has thickened enough to coat the back of a spoon, about 5 minutes.
- Let the pudding cool completely before serving: This will allow the flavors to develop and the pudding to set properly. You can also chill the pudding for a few hours or overnight for a more intense flavor.
- Serve the pudding with your favorite toppings: Some popular toppings include whipped cream, chocolate chips, fruit, and nuts.
Conclusion:
Chocolate pudding is a classic dessert that is loved by people of all ages. It is easy to make and can be customized with a variety of flavors and toppings. Whether you are looking for a simple dessert for a weeknight meal or a special treat for a party, chocolate pudding is a great option.
