1 cup sugar
1/3 cup baking cocoa
1/4 cup all-purpose flour
1/4 teaspoon salt
1-1/2 cups water
2 egg yolks
1 tablespoon butter

Steps:

  • In a large saucepan, combine the sugar, cocoa, flour and salt. Gradually whisk in water and egg yolks. Cook over medium heat until mixture comes to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened., Remove from the heat; stir in butter and vanilla until blended. Pour into individual dishes. Refrigerate until set. Garnish with whipped topping and chocolate curls.

1000 ml (4 and 1/3 cups) milk
20 g (2 teaspoons) all-purpose flour
21 g (3 tablespoons) cornstarch
105 g (1/2 cup) granulated sugar
35 g (1/3 cup) cocoa powder
2 teaspoons cognac or whiskey (optional)

Steps:

  • Place the flour, cornstarch, sugar and cocoa powder into a medium saucepan and stir. Mix in the milk and whisk well.
  • Take the saucepan to the medium heat and whisk continuously for almost 10 minutes until the mixture thickens and starts to boil. As it boils, lower the heat and whisk the mixture for an extra 2 minutes to avoid any cornstarch-flour taste. Take the pudding from the heat and add the cognac/whiskey if using and whisk well.
  • Pour the pudding into the serving cups and let them cool for 1 hour at room temperature and then keep them in the refrigerator for almost 2 hours.

2 cups whole milk
1/2 cup granulated sugar

4 ounces bittersweet chocolate, chopped
1 tablespoon unsalted butter
1 1/2 teaspoons pure vanilla extract

  • Whisk the egg yolks and 2 tablespoons coffee liqueur in a medium bowl. Whisk the milk, granulated sugar, cocoa powder, cornstarch and salt in a medium saucepan until smooth. Bring to a simmer over medium heat, whisking occasionally, until slightly thickened, about 8 minutes. Hefty pinch of coarse salt
1 1/2 cups milk
2 tablespoons unsalted butter, softened

  • In a medium bowl, whisk together the flour, cocoa powder, sugar, and salt. Press through a sieve into a medium saucepan to eliminate any lumps. Whisk in the milk.
