1 teaspoon packed light brown sugar

3 1-pound New York strip steaks (about 1 1/2 inches thick)
1 tablespoon unsalted butter
For the gravy:
4 strips bacon, diced
1 leek (white and light green parts only), finely chopped
1 tablespoon all-purpose flour
1/2 cup whiskey
3 cups low-sodium chicken broth
2 bay leaves
1/2 cup heavy cream
1 tablespoon unsalted butter
2 tablespoons chopped fresh parsley

2 tablespoons cornstarch
1 ¼ teaspoons onion powder
1 ¼ teaspoons garlic powder
½ teaspoon salt

4 (4 ounce) beef cube steaks
2 tablespoons unsalted butter
2 tablespoons olive oil
3 very large sweet onions (such as Vidalia®), thinly sliced
2 cups beef stock
1 cup milk

  • In a shallow bowl, stir together the flour, cornstarch, onion powder, garlic powder, salt, black pepper, and cayenne pepper until thoroughly mixed. 2 cloves garlic, crushed
⅓ cup sweet-hot mustard, divided
4 slices bacon
