COCONUT OAT BARS

Coconut Oat Bars image

This is currently quite popular in my wee town and the recipe is being circulated. Thought I'd share it here. One of the ladies brought it back from her vacation and now everyone seems to be making it. I've not tried it because of the sugar but it must be good. I'm guessing at the times as none were given.

Tips:

  • Use fresh shredded coconut. Fresh shredded coconut has a more intense flavor and aroma than dried coconut. If you don't have fresh coconut on hand, you can use unsweetened dried coconut flakes, but be sure to toast them in a pan over medium heat until they are golden brown and fragrant.
  • Don't overmix the batter. Overmixing the batter will make the bars tough. Mix the batter just until the ingredients are combined.
  • Bake the bars until they are just set. The bars should be slightly firm to the touch when you remove them from the oven. If you overbake them, they will be dry and crumbly.
  • Let the bars cool completely before cutting them. This will help prevent them from crumbling.
  • Store the bars in an airtight container at room temperature for up to 3 days. You can also freeze the bars for up to 2 months.

Conclusion:

Coconut oat bars are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your liking. With a few simple ingredients, you can create a batch of these tasty bars that the whole family will enjoy. Be sure to experiment with different mix-ins and toppings to find your favorite combination.
