6 cloves garlic, minced
2 medium carrots, chopped
1 small onion, chopped
salt and ground black pepper to taste
3 medium plum tomatoes, chopped
2 cups vegetable stock

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your curry. Choose ripe, juicy tomatoes, tender coconut milk, and plump red lentils.
  • Don't skip the sautéing step: Sautéing the onions, garlic, and ginger in oil or ghee helps to release their flavors and aromas. This step is essential for building a flavorful base for your curry.
  • Use a variety of spices: Curry powder, cumin, coriander, turmeric, and chili powder are all common spices used in red lentil curry. Feel free to experiment with different spices to create your own unique blend.
  • Don't overcook the lentils: Red lentils cook quickly, so be careful not to overcook them. Otherwise, they will become mushy and lose their flavor.
  • Add a squeeze of lime juice: A squeeze of lime juice at the end of cooking will brighten up the flavors of your curry and give it a refreshing touch.
