Time 30m

Number Of Ingredients 12

2 x 140g skinless cod loin or pollock fillets
1 tbsp rapeseed oil, plus 2 tsp
1 tsp fresh thyme leaves
1 large garlic clove, finely grated
½ lemon, zested and juiced
1 large red pepper, sliced
2 leeks, well washed and thinly sliced
2 tbsp flaked almonds
1 tbsp tomato purée
¼ tsp vegetable bouillon powder
1 tsp apple cider vinegar
100g baby spinach, wilted in a pan or the microwave

Steps:

  • Heat oven to 220C/200C fan/ gas 7 and put the fish fillets in a shallow ovenproof dish so they fit quite snugly in a single layer. Tips:

  • Choose fresh cod fillets: Look for fillets that are firm and have a mild, sweet smell. Avoid fillets that are slimy or have a strong fishy odor.
  • Pat the cod fillets dry before cooking: This will help to prevent the fish from steaming instead of searing.
  • Season the cod fillets liberally with salt and pepper: This will help to enhance the natural flavor of the fish.
  • Cook the cod fillets over medium-high heat: This will help to create a crispy crust on the outside of the fish while keeping the inside moist and flaky.
  • Don't overcook the cod fillets: Cod fillets are very delicate and can easily become dry and tough if overcooked. Cook the fillets just until they are opaque in the center, about 3-4 minutes per side.
  • Serve the cod fillets immediately: Cod fillets are best served hot out of the pan. You can garnish the fillets with fresh herbs, such as parsley or dill, or a squeeze of lemon juice.

Conclusion:

Cod fillet and baby spinach with balsamic vinegar is a simple yet elegant dish that is perfect for a weeknight meal. The cod fillets are seared until crispy on the outside and flaky on the inside, and the baby spinach is wilted and tossed with a flavorful balsamic vinaigrette. This dish is sure to please even the most discerning palate.
