1 pound ground beef
1 (15 ounce) can pinto beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes, undrained
2 cups beef broth
1 cup frozen corn
1 (6 ounce) package Knorr® Fiesta Sides™ - Taco Rice
1 tablespoon buttery spread
½ cup shredded cheese, or more to taste
½ cup sour cream, or more to taste

Steps:

  • Place a heavy pot over medium heat. Add onions and ground beef and cook and stir until beef is browned and crumbled and onions begin to turn translucent, about 5 minutes. Drain grease from pot.
  • Pour in beef broth; add beans, tomatoes, corn and Knorr® Fiesta Sides - Taco Rice. Stir in 1 buttery spread. Bring mixture to a boil. Reduce heat, cover, and simmer until rice is tender, about 7 minutes.
  • Remove pot from heat; let pot stand at least 2 minutes. Stir. Serve topped with shredded cheese and sour cream.

1 small yellow onion, diced
1 bell pepper (any color), diced (can of corn may be substituted)
2 x 15.5 ounce cans black beans, drained
1 cup mild salsa
8 ounce can tomato sauce
1 ounce envelope taco seasoning
shredded cheese
cilantro
avocado
tortilla strips
sour cream
hot sauce

Steps:

  • Dice the bell pepper and onion.
  • Brown the meat on the stovetop. If not using a non-stick pan, a drizzle of olive oil my be needed to avoid sticking.
  • Add diced onion and cook for another 3 minutes.

1/2 teaspoon dried chilli flakes
1 tablespoon lime juice
1 tablespoon vegetable oil
Sea salt and cracked black pepper
8 x 80g pieces firm white fish fillets, skin on
8 butter lettuce leaves
8 tortillas, warmed
1 quantity lime and coriander tofu mayonnaise , lime wedges, sliced pickled jalapeño chillies and coriander (cilantro) leaves, to serve

Steps:

  • Combine the chilli flakes, lime juice, oil, salt and pepper. Coat both sides of the fish with the mixture. Heat a large non-stick frying pan over high heat. Cook the fish, in batches, for 1-2 minutes each side or until cooked through. Divide the lettuce between the tortillas and top with the fish.
