2 cups water
1 cup quinoa, rinsed
2 cups fresh baby spinach, thinly sliced
1 cup grape tomatoes, halved
1 medium cucumber, seeded and chopped
1 medium sweet orange pepper, chopped
1 medium sweet yellow pepper, chopped
2 green onions, chopped
DRESSING:
3 tablespoons lime juice
2 tablespoons olive oil
4 teaspoons honey
1 tablespoon grated lime zest
2 teaspoons minced fresh gingerroot
1/4 teaspoon salt

Steps:

  • In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork. Transfer to a large bowl; cool completely., Stir spinach, tomatoes, cucumber, peppers and green onions into quinoa. In a small bowl, whisk dressing ingredients until blended. Drizzle over quinoa mixture; toss to coat. Refrigerate until serving.

1 can (15 oz.) black beans, rinsed
1 can (11 oz.) corn, drained
1 red pepper, chopped
5 green onions, sliced
6 slices OSCAR MAYER Baked Cooked Ham, finely chopped
1/2 cup KRAFT Zesty Italian Dressing

Steps:

  • Bring quinoa and broth to boil in medium saucepan; cover. Simmer on low heat 15 min. or until quinoa is tender and broth is absorbed; spoon into medium bowl. Cool.

2 cups cooked quinoa
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (14 ounce) can corn
1 red onion, chopped
1 cup cooked brown rice
1 red bell pepper, chopped
¼ cup chopped fresh cilantro
¾ cup olive oil
⅓ cup red wine vinegar
1 tablespoon chili powder, or to taste
2 cloves garlic, mashed
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper, or to taste

Steps:

1 ½ cups water
1 cup dry quinoa (such as Quinta®)

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can yellow corn kernels, drained and rinsed

2 small tomatoes, seeded and diced
2 small orange tomatoes, seeded and diced
2 small yellow tomatoes, seeded and diced
