Baby potatoes, garlic powder, dried parsley, and a little salt and pepper is all that you need for these little gems. Easy to prepare and they can be made well in advance, a bonus when planning a dinner party or for an easy night meal. I've used parsley and garlic but you can choose any seasoning that will complement your meal.

COMPANY BABY POTATOES

Just wanted to do something different with potatoes. My husband likes potato skins a little crispy and we both love garlic. The ingredients are approximate and I used rosemary because that is what I had on hand. They looked like I had spent a lot of time preparing them! They were so easy and could be prepared ahead of time that I called the Company Baby Potatoes. (Plus they were GOOD!)

Tips:

  • Choose the right potatoes: Look for small, firm potatoes with smooth skin. Avoid potatoes that are bruised or have blemishes.
  • Wash the potatoes thoroughly: Scrub the potatoes under cold running water to remove any dirt or debris.
  • Parboil the potatoes: This will help them cook evenly and prevent them from becoming too crispy on the outside and raw on the inside. To parboil, place the potatoes in a pot of cold water and bring to a boil. Reduce heat to medium-low and simmer for 5-7 minutes, or until the potatoes are tender when pierced with a fork.
  • Drain the potatoes: Drain the potatoes in a colander and let them cool slightly.
  • Toss the potatoes in oil: Drizzle the potatoes with olive oil and toss to coat. This will help them brown evenly.
  • Season the potatoes: Sprinkle the potatoes with salt, pepper, and any other desired seasonings. Garlic powder, onion powder, paprika, and dried rosemary are all good options.
  • Roast the potatoes: Preheat your oven to 400°F (200°C). Spread the potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until they are golden brown and crispy.
  • Serve the potatoes: Baby potatoes can be served as a side dish or a snack. They can also be used in salads, soups, and stews.

Conclusion:

Baby potatoes are a versatile and delicious vegetable that can be prepared in a variety of ways. Whether you are roasting them, boiling them, or frying them, baby potatoes are sure to be a hit with your family and friends. So next time you are looking for a simple and tasty side dish, give baby potatoes a try.
