1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
¼ cup milk
½ cup chopped onion
1 teaspoon salt
½ teaspoon pepper
⅛ teaspoon dried dill weed
1 ½ cups shredded Cheddar cheese
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
  • In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
  • Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

5 large potatoes, peeled and cut into eighths
1/2 cup sour cream
3 ounces cream cheese, softened
4 tablespoons butter, divided
1 teaspoon salt

  • Cover potatoes with water in lg pot.
  • Cook until tender.
  • Drain and mash.
  • Add sour cream, cream cheese, and 3 T butter; mix well, add salt.

2 lbs Simply Potatoes Traditional Mashed Potatoes
2 ounces soft fresh goat cheese, cubed (chevre)
2 ounces cream cheese, cubed
2 tablespoons butter, cubed
2 slices bacon, cooked and crumbled
1/2 medium red bell pepper, diced
1/2 medium green bell pepper, diced
3 green onions, thinly sliced (if they are large use 2 1/2)
1/8 teaspoon salt (to taste)
1/8 teaspoon pepper
1/2 cup cheddar cheese, shredded, divided
1/2 cup parmesan cheese, grated, divided (not the canned type)

Steps:

  • Preheat the oven to 350 degrees, and greased a baking dish.
  • Peel the film at the corner of the Simply Potatoes package to vent and heat on high for 3 minutes in the microwave. Carefully remove the film (be careful not to burn yourself with steam) and stir. Microwave on high for 1 more minute.
  • In a large bowl, mix the potatoes, goat cheese, cream cheese, and butter. Stir together until well-blended.
  • Carefully stir in the crumbled bacon, bell pepper, green onions, and pepper. Taste at this point and see if you want to add the salt. Stir in 1/3 cup of the cheddar and parmesan cheese until well combined.
  • Transfer to a prepared baking dish and sprinkle with the remaining cheese.
  • Bake, uncovered, for 20 to 25 minutes or until heated through.

Just wanted to do something different with potatoes. My husband likes potato skins a little crispy and we both love garlic. The ingredients are approximate and I used rosemary because that is what I had on hand. They looked like I had spent a lot of time preparing them! They were so easy and could be prepared ahead of time that I called the Company Baby Potatoes. (Plus they were GOOD!)

8 baby potatoes
3 -4 tablespoons olive oil
3 -5 cloves garlic (cut in large pieces)
2 teaspoons rosemary
1 teaspoon garlic salt
1 tablespoon parsley (chopped)
1 tablespoon grated romano cheese

Steps:

  • Wash potatoes.
  • Place them in a sauce pan and cover with water.
  • Boil until soft (approximately 20 minutes).
  • While potatoes are boiling put olive oil, garlic cloves (cut in large pieces), rosemary and garlic salt in heavy skillet.
  • Heat the oil on low until potatoes are done.
  • When the potatoes are done remove them from water and dry on paper towels.
  • Increase the skillet heat to medium and remove garlic cloves.
  • Add potatoes to skillet and saute about 10 minutes or until just browned, turning occassionly.
  • To serve remove potatoes to a serving bowl, pour remaining oil over them and dust with chopped parsley and grated romano cheese.

1/4 c milk

4 large russet baking potatoes
4 Tbsp butter
*seasoned salt and pepper to taste
1/4 c each: (grated) fontina, havarti and cheddar
2 Tbsp grated parmesan
1 Tbsp fresh chopped parsley
1 Tbsp fresh chopped thyme
*sour cream, optional
*more fresh chopped herbs, optional

Steps:

  • 1. Rinse and scrub potatoes, pat dry. Cut crosswise into thin slices cutting almost all the way through. (*Use 2 bamboo skewers on either side to prevent cutting all the way down.) Place into baking dish and fan out slightly. Drizzle each evenly with the melted butter. Sprinkle with seasoned salt and pepper to taste. Sprinkle with fresh herbs.
  • 2. Bake in preheated 425 oven for 1 hour or til tender. Sprinkle with cheeses (tossed to mix) into and between slices. Bake 10 minutes longer or til cheese has melted. Serve with sour cream if desired. Sprinkle with more fresh herbs if desired, too.
