1 can (16 ounces) whole potatoes, drained and quartered

1 onion, diced
2 (16 ounce) cans green beans, drained
1 teaspoon salt
1 tablespoon sugar
1 (10 ounce) can Rotel tomatoes & chilies
6 slices crisp bacon, crisp fried and crumbled, reserve drippings

Steps:

  • Saute onion in reserved bacon drippings in large skillet until tender.
  • Add green beans, stirring to coat with bacon drippings.
  • Cook, covered, for several minutes.
  • Add salt, sugar, undrained tomatoes and crumbled bacon; mix well.

This is a favorite recipe given to me by my best friend. It makes an impressive looking dish and it's also really, good. We always serve it at holidays. It's easily adjusted to serve more people.

2 lbs green beans
1 teaspoon salt
1 red bell peppers or 1 orange bell pepper
1 yellow bell pepper
1 cup walnut halves
1/4 cup olive oil
1/2 teaspoon chopped garlic
1 large purple onion
salt and pepper

Steps:

  • Put walnut halves on a cookie sheet and roast them in a 300 degree oven until lightly toasted.
  • Remove from the oven and allow to cool.
  • Cut the ends off the green beans and remove any strings.
  • Place the green beans in a saucepan with 1 teaspoon salt.
  • Cover with water.
  • Bring to a boil over medium high heat and cook for about 5-10 minutes or until just tender-crisp.
  • Remove from heat and drain well.
  • Put olive oil into a large skillet and saute bell pepper which has been cut into narrow strips& onion which is cut into thin rings.
  • Add garlic to oil mixture.
  • Put drained green beans into oil mixture and stir until heated through.
  • Add salt& pepper to taste.
  • Just before serving, stir roasted walnut halves into the green bean mixture.
  • Dish up into a serving bowl or platter and enjoy!

2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. 4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels.
