1 bag (1 1/4 pounds) refrigerated shredded hash browns
1 tablespoon butter or margarine
2 medium green onions, sliced (2 tablespoons)
1 package (8 ounces) sliced mushrooms
1 cup frozen mixed vegetables (from 1-pound bag), thawed
12 eggs
2 cups shredded Cheddar cheese (8 ounces)
1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Pat hash browns in bottom of baking dish.
  • Melt butter in 10-inch skillet over medium heat. Cook onions and mushrooms in butter 5 to 7 minutes, stirring occasionally, until mushrooms are tender. Stir in mixed vegetables.
  • Beat eggs, cheese, milk, salt and pepper in large bowl with wire whisk until well mixed. Stir in mushroom mixture. Carefully pour into baking dish.
  • Bake uncovered about 40 minutes or until eggs are set in center.

2 tablespoons olive oil
1 garlic clove, crushed
2 lbs chicken, meaty pieces
8 medium red potatoes, halved
1 teaspoon dried rosemary
salt
pepper
paprika
1 bunch scallion, chopped
1 sweet red pepper, cored, seeded and chopped
2 1/2 teaspoons lemon juice
2 tablespoons madeira wine or 2 tablespoons white wine

Steps:

  • Preheat oven to 375.
  • Mix oil and garlic.
  • Arrange chicken and potatoes in a shallow roasting pan.
  • Brush well with oil and sprinkle with half the rosemary, and salt, pepper, and paprika to taste.
  • Bake 25 minutes.
  • Remove from oven, turn chicken and potatoes; sprinkle with remaining rosemary and salt, pepper and paprika to taste.
  • Bake 25 minutes longer and check for doneness. Chicken is done if juices run golden or clear when pierced at a heavy joint. Chicken should be crisp and lightly browned.
  • Sprinkle scallions and red pepper over chicken. Bake 5 more minutes.
  • Sprinkle lemon juice and wine over chicken. Place on hot platter and pour any pan juices over it.,.
  • Serve hot.
  • Tips: Use breasts and thighs for generous servings. But if you want wings, add them at step 3, since they cook quickly. Roasted red peppers in jars will do when sweet red peppers are not available.

2 red bell peppers (diced)
3 cloves garlic (minced)
1 teaspoon olive oil
2 cups cooked fresh corn kernels (or frozen)
2 cups shredded lacinato (aka dinosaur kale)
4 cups cubed baked chicken (you'll need 2 lbs of boneless skinless chicken breasts - see notes)
1/2 cup avocado oil mayonnaise
1 teaspoon ground black pepper
1 teaspoon sea salt
1/2 cup shredded cheddar cheese (optional)
6 strips bacon (cooked and sliced or crumbled)
1 large green onion for garnish

Steps:

  • Heat 1 teaspoon olive oil in a large sauté pan over medium-high heat. When hot, add the onion, peppers and garlic. Cook, stirring occasionally, for 5 to 6 minutes, until the vegetables are wilted and slightly browned. This can be done up to 3-4 days in advance. Store in the refrigerator until ready to prep the casserole.
  • Preheat the oven to 350°F.
  • In a large bowl, stir together the precooked onion and bell pepper mixture, corn, kale, chicken, mayo, salt and pepper until combined.
  • Transfer the chicken mixture to a 3-quart (9X13) rectangular casserole dish, then top with the cheddar cheese and bacon.
  • Bake for 30 minutes, until the cheese is browned and bubbling.
  • Meanwhile, slice the green onion and set aside.
  • After removing the casserole from the oven, let it cool slightly, then garnish with green onions and serve!

1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup diced red pepper
1/3 cup flour

1 1/2 cups milk
1/2 tsp salt

2 cups cooked chicken, diced (I used half of a rotisserie chicken from Costco)
1 cup frozen peas and carrots
Biscuit topping:
1 cup flour
2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup milk
1 cup shredded sharp cheddar cheese
1 diced green onion, optional

Steps:

  • In a large skillet, melt butter over medium heat. Add the onion, garlic, and red pepper to the pan. Cook over medium heat until onions are slightly tender.
  • Whisk the flour into the pan and cook until flour begins to look golden.
  • Slowly whisk in the chicken broth to avoid lumps. Then do the same with the milk.
  • Allow mixture to cook until slightly thickened.
  • Mix in the salt, pepper, chicken, and frozen carrots and peas.
  • Pour mixture into a 9 x 13 baking dish or divide between six individual casserole dishes.
  • In a bowl, whisk together the flour, baking powder, and salt.
