6 bananas
1 (6 ounce) can frozen orange juice concentrate, thawed slightly
1 (20 ounce) can crushed pineapple, drained
1 (10 ounce) package frozen strawberries, partially thawed
1 cup white sugar
1 cup boiling water

Steps:

  • In a large bowl, mash bananas. Stir in orange juice concentrate, pineapple and strawberries until well mixed. In a separate bowl, stir sugar into boiling water until dissolved. Allow to cool slightly, then pour over fruit mixture; stir to coat. Freeze until cold and just firm.

12 ounces mandarin oranges, undrained
2 bananas, sliced
2 cups strawberries, halved
1 1/2 cups green seedless grapes, halved

  • Drain pineapple and oranges reserving juice in small bowl.

1/2 cup sugar
2 Tbsp. lemon juice
1 Tbsp. cornstarch
1 egg yolk, beaten
2 cups thawed COOL WHIP Whipped Topping
1 cup JET-PUFFED Miniature Marshmallows
1 navel orange, peeled, sectioned and cut in half
1 cup seedless green grapes, cut in half
1/2 cup slivered almonds

Steps:

  • Drain pineapple, reserving 3/4 cup liquid. Pour reserved liquid into 1-qt. microwaveable measuring cup. Add sugar, lemon juice, cornstarch and egg yolk; mix well.
  • Microwave on HIGH 2 to 4 min. or until thickened, stirring every minute. Pour into large bowl; cool.
  • Add COOL WHIP to pineapple juice mixture; stir gently until blended. Add crushed pineapple along with all remaining ingredients; mix lightly.
  • Refrigerate 24 hours before serving.

This is a very easy recipe to customize for your own family's likes & dislikes, as well as considering which fruits are in season for you. Strawberries, raspberries and blackberries are all great in this too. Sugar-free pudding works just as well if you prefer.

1 (2 1/2 ounce) box instant vanilla pudding
2 apples, chopped
2 tablespoons lemon juice
1 1/2-2 cups blueberries
2 cups seedless grapes
1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple tidbits, in its own juice (drain & reserve the juice!)
1/4 cup orange juice

Steps:

  • In a large mixing bowl, toss the chopped apples in 2 tablespoons lemon juice (Note: orange juice could also be used instead of lemon juice).
  • Add in the drained pineapple tidbits, mandarin oranges and grapes.
  • In a small mixing bowl, combine the dry pudding mix with 1/4 cup orange juice and the liquid you had drained from the can of pineapple. Using a wire whisk, mix it until it starts to thicken. If it seems too thick, thin it with a little more orange juice.
  • Pour the dressing over the fruit and toss gently to mix well.
  • Fold in the blueberries last (and gently).
  • Chill until ready to serve. This keeps 3-4 days if it lasts that long!

1 (20 ounce) can pineapple chunks
⅔ cup sugar
1 tablespoon cornstarch
½ cup orange juice
3 tablespoons lemon juice
1 egg, beaten
½ teaspoon butter or margarine

Steps:

  • Drain pineapple, reserving the juice. Set pineapple aside for salad. In a saucepan, combine sugar and cornstarch. Stir in the pineapple juice, orange juice and lemon juice. Add egg, mix well. Cook over medium heat, stirring constantly, until slightly thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat and stir in butter. Cover and chill. Serve over a mixture of fresh or canned fruit.n
