1 cup sour cream, at room temperature
2 eggs, at room temperature and lightly beaten
1 (8.5 ounce) box Jiffy Corn Muffin mix
1 stick (8 tablespoons) salted butter, melted and slightly cooled

Steps:

  • Preheat oven to 350°F. Grease a 1 ½ or 2-quart baking dish or spray with nonstick cooking spray; set aside.
  • In a large bowl, stir together all of the ingredients. Transfer the mixture to the prepared dish.
  • Bake for 45-50 minutes, or until lightly browned on top. The casserole is done when the center is set -- but still soft.

15.25 oz. whole kernel sweet corn (drained)
8.5 oz. Jiffy corn muffin mix
8 oz. sour cream
1 stick butter (melted)
1 cup cheddar cheese (shredded)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients except for the cheddar cheese. Be sure to drain the whole kernel corn.
  • Pour into a greased 9 x 13 casserole dish or 10-inch cast iron skillet.
  • Bake uncovered for 45 minutes.
  • Top with shredded cheddar. Bake for an additional 10-15 minutes, until the top begins to brown.
  • Let stand for 5 minutes prior to serving.

1 (10 ounce) package frozen corn, cooked and drained
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 cup sugar
1/4 cup milk
1 egg, slightly beaten
1/3 cup cracker crumb (Ritz)
1 tablespoon butter, melted

Steps:

  • Melt butter in skillet, add flour.
  • Blend well, add milk and sugar.
  • Stir constantly until mixture is bubbly.
  • Remove from heat.
  • Place back on heat and boil 1 minute.
  • Stir in corn and egg, mix well.
  • Pour into a well greased casserole dish.
  • Mix crackers with butter and sprinkle over top.
  • Bake uncovered in 350 oven for 30-35 minutes.
