  • Fill a large pot about 3/4 full of water and bring to a boil. Stir in sugar and lemon juice, dissolving the sugar. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 10 minutes.

1/3 cup honey
1/4 lb butter, melted
1/2 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Shuck and silk the corn and cut away any bruised areas.
  • Bring lots of water and the honey to a rolling boil in a large pot.
  • Add the corn and cook for four minutes, after the water comes back to a boil.
  • Stir together the melted butter, salt and white pepper in a baking dish long enough to hold an ear of corn.

2 cups fresh corn kernels
1 habanero pepper, seeded and diced
2 large eggs
⅓ cup water
⅓ cup honey
⅔ cup all-purpose flour
½ cup unsalted butter, melted
⅓ cup cornmeal
1 teaspoon kosher salt
½ teaspoon baking powder
