CORN-MUSHROOM RISOTTO

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 10

5 ounces bacon, diced
3 ears corn, husked
6 ounces shiitake mushrooms
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
2 medium shallots, chopped
1 1/4 cups arborio rice
1 cup dry white wine
1/2 to 3/4 cup grated parmesan cheese, plus more for topping
2 tablespoons chopped fresh chives

Steps:

  • Cook the bacon in large saucepan until crisp. Remove with a slotted spoon and drain on paper towels. Meanwhile, cut the corn from the cobs and set aside. Snap the cobs in half and put in a pot with 7 cups water; bring to a low simmer. Stem and slice the mushrooms.
  • Cook the mushrooms in the pan with the bacon drippings over medium-high heat until slightly crisp, about 3 minutes. Season with salt and pepper and transfer to a plate. Add the butter and shallots to the pan, season with salt and pepper and cook until soft, about 2 minutes. Add the rice and cook, stirring, 1 minute. Stir in the wine until absorbed, then add 1 teaspoon salt and the corn kernels.
  • Ladle in 1/2 cup of the hot corn broth, stirring until absorbed. Continue adding broth in 1/2-cup increments, allowing it to be absorbed before adding more, until the rice is just tender, about 20 minutes. Stir in the cheese, chives and some of the mushrooms and bacon. Season with salt and pepper. Serve topped with the remaining bacon and mushrooms and more cheese.

BARLEY AND SHIITAKE MUSHROOM RISOTTO

Barley and Shiitake Mushroom Risotto image

Provided by Guy Fieri

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 16

6 cups vegetable stock
1/2 onion
2 carrots, halved
2 celery sticks, large chop
2 tablespoons extra-virgin olive oil
1 cup pearled barley
2 tablespoons minced shallots
2 cloves garlic, minced
1/2 Vidalia onion, cut into 1/4-inch dice
1 teaspoon kosher salt
1 pound shiitake mushrooms, stemmed, thinly sliced
3 sprigs fresh thyme, leaves stripped
2 tablespoons unsalted butter, cubed
3/4 cup grated Parmesan
1/2 teaspoon fresh ground black pepper
2 tablespoon finely chopped flat-leaf parsley

Steps:

  • For the vegetable stock: Add the vegetable stock, onion, carrots and celery to a large saucepan. Bring to a boil, then maintain at a simmer while making the risotto.
  • For the risotto: Add the olive oil to a large heavy-bottomed saucepan set over medium-high heat. When hot add the barley and saute until lightly toasted, 2 to 3 minutes. Add the shallots, garlic, Vidalia onions and salt; cook, stirring often with a wooden spoon, until the shallots become translucent, 6 to 8 minutes. Add the shiitakes and thyme leaves and cook for another 3 to 4 minutes. Next, begin adding the vegetable stock, one ladleful at a time, allowing each ladleful to be absorbed before adding the next. Stir frequently throughout; this brings out the starch in the barley. When the barley is tender and all of the vegetable stock has been used, remove the risotto from the heat and stir in the butter, Parmesan and pepper. Transfer to a serving platter and garnish with the parsley. Serve immediately.

MUSHROOM AND OKRA CURRY

Mushroom and Okra Curry image

The earthy flavor of mushroom and the sweet nutty flavor of okra combine delicously in this easy Indian curry. The best way to eat okra is when it is young and freshly picked. I prefer to cook it whole. Just wash and dry the okra and trim the stem ends. Be careful not to slice into the pod itself and allow juice to escape. This can be a main dish for 4 people or a side dish for 6.

RISOTTO WITH LEEKS, SHIITAKE MUSHROOMS, AND TRUFFLES

Risotto With Leeks, Shiitake Mushrooms, and Truffles image

This delicious vegetarian risotto adapted from Chef Gabriel Rucke, of "Le Pigeon" in Portland, OR and was printed in "Bon Appétit Magzine" (Sept. 2007). I cut down the fat and it is still very rich. If you want to prepare the original recipe, increase whipping cream to 3/4 cup, butter with the mushrooms to 1/4 cup and butter with the rice to 4 tablespoons. Can be served as an appetizer or a main dish.

Categories     One Dish Meal

Time 1h55m

Yield 8 serving(s)

Number Of Ingredients 15

2 large leeks, halved, thinly sliced crosswise (white and pale green parts only)
1/4 cup whipping cream
1 lb shiitake mushroom, stemmed, cut into 1/4- to 1/3-inch-thick slices
1 onion, halved, thinly sliced lengthwise
2 tablespoons butter, melted
1 tablespoon white truffle oil
1 teaspoon minced fresh thyme leave
2 tablespoons butter or 2 tablespoons olive oil, divided
1 onion, chopped
1 1/2 cups arborio rice or 1 1/2 cups medium-grain white rice
1/2 cup dry white wine
5 cups hot vegetable broth (may need more)
1/2 cup grated parmesan cheese
2 teaspoons shaved or chopped black truffles (optional) or 1 tablespoon truffle oil (optional)
chopped fresh parsley

  • For leeks: Bring leeks and cream to boil in heavy medium saucepan. Reduce heat to medium and simmer until leeks are tender and cream is thick, stirring often, about 15 minutes. Season with salt and pepper. (DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewarm before continuing.)
  • For mushrooms: Preheat oven to 400°F Toss all ingredients on rimmed baking sheet. Sprinkle with salt and pepper. Roast until mushrooms are tender and light brown around edges, stirring occasionally, about 30-45 minutes. (DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.)
  • For risotto: Melt 1 tablespoon butter in heavy large saucepan over medium heat. Add onion and cook until beginning to soften, about 5 minutes. Add rice; stir 1 minute. Add wine and stir until almost all liquid is absorbed, about 1 minute. Add 1 cup hot broth. Simmer until broth is almost absorbed, stirring often, about 4 minutes. Add more broth, 1 cup at a time, allowing each addition to be absorbed before adding next and stirring often, until rice is tender and mixture is creamy, about 20 minutes longer. Stir in leek mixture, mushroom mixture, remaining 1 tablespoon butter, cheese, and truffle. Transfer to large bowl, sprinkle with parsley, and serve.

CREAMY CORN-MUSHROOM RISOTTO RECIPE

Creamy Corn-Mushroom risotto Recipe image

Provided by á-1569

Number Of Ingredients 13

4 1/2 cups water
2 cups fresh corn kernels (from 5 ears), divided
2 tablespoons olive oil
1 1/2 cups chopped fresh mushrooms
1 cup chopped yellow onion
1 cup uncooked Arborio rice
3 garlic cloves, minced
4 teaspoons fresh thyme leaves, divided
1/2 cup dry white wine
2 ounces Parmigiano-Reggiano cheese, grated (about 1/2 cup) and divided
1 1/2 tablespoons unsalted butter
5/8 teaspoon kosher salt
2 tablespoons toasted pine nuts

Steps:

  • Step 1 Process 4 1/2 cups water and 1 cup corn in a blender until smooth, about 1 minute. Pour through a fine wire-mesh strainer into a large measuring cup; discard solids. Add water, if necessary, to equal 4 1/2 cups. Transfer to a saucepan; bring to a simmer over medium-high. Reduce heat to low. Step 2 Heat olive oil in a Dutch oven over medium-high. Add mushrooms, onion, and remaining 1 cup corn. Cook, stirring often, until onions are translucent, 4 to 5 minutes. Add rice, garlic, and 2 teaspoons thyme. Cook, stirring constantly, until rice is toasted, 1 to 2 minutes. Add wine; bring to a boil, and cook, stirring occasionally, until liquid is almost evaporated. Step 3 Stir in 2 cups corn broth; reduce heat to medium-low, and cook, stirring often, until broth is almost absorbed, about 10 minutes. Add 1 cup corn broth, and cook, stirring often, 5 minutes. Repeat with 1 cup corn broth. Remove from heat. Stir in 1/4 cup cheese, butter, salt, and remaining 1/2 cup corn broth. Divide among 4 bowls; top evenly with pine nuts, remaining 2 teaspoons thyme, and remaining 1/4 cup cheese.

Tips:

  • For the best risotto, use high-quality arborio rice. This short-grain rice has a high starch content, which helps to create the creamy texture of risotto.
  • Toast the rice in a little olive oil before adding the liquid. This will help to develop the rice's flavor.
  • Add the liquid to the rice gradually, stirring constantly. This will help to prevent the rice from clumping.
  • Cook the risotto until it is al dente, or slightly firm to the bite. This usually takes about 18-20 minutes.
  • Stir in some butter and Parmesan cheese at the end of cooking to create a creamy, flavorful risotto.
  • Garnish the risotto with fresh herbs, such as parsley or basil.

Conclusion:

Corn risotto with okra and shiitake mushrooms is a delicious and easy-to-make dish that is perfect for a weeknight meal. The risotto is creamy and flavorful, and the okra and shiitake mushrooms add a unique twist. This dish is sure to please everyone at your table.
