Yield 6 cups

Number Of Ingredients 8

3 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil

8 ounces mozzarella pearls or fresh mozzarella, cut into small cubes
1 bunch scallions, thinly sliced
1 1/2 cups fresh basil leaves

Steps:

  • Whisk together the vinegar, 2 teaspoons salt and some pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.
  • Shear off the corn kernels with a sharp knife over a bowl (you should have about 4 cups). Toss in the tomatoes, mozzarella and scallions. Pour the vinaigrette over the salad and toss to coat. Cover and let stand for at least 15 minutes and up to 2 hours. Before serving, tear the basil over the salad and stir.

CORN SALAD WITH TOMATOES, FETA AND MINT

Corn Salad With Tomatoes, Feta and Mint image

Fresh raw corn shucked from the cob is ideal here. The juice from the tomatoes delivers just the right amount of acidity, so there's no need for vinegar. Eat this as is, by the bowl, or toss it with cooked rice or beans for a more filling meal - you'll want to add oil and vinegar accordingly. In midsummer, with peak-season produce, there is nothing better.

Tips:

  • Choose fresh, ripe ingredients: The fresher the ingredients, the better the salad will taste. Look for ripe tomatoes, crisp cucumbers, and fresh herbs.
  • Use a variety of colors and textures: This will make the salad more visually appealing and interesting to eat. For example, you could use red tomatoes, yellow corn, green cucumbers, and purple onions.
  • Don't overdress the salad: A little bit of dressing goes a long way. Too much dressing will overwhelm the other ingredients and make the salad soggy.
  • Let the salad rest before serving: This will allow the flavors to meld and develop. If you can, let the salad rest for at least 30 minutes before serving.

Conclusion:

Corn salad with tomatoes, feta, and mint is a refreshing and flavorful side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its bright colors and delicious flavors, this salad is sure to be a hit at your next party or barbecue.
