Cornbread is a classic Southern dish that is often served with chili, stew, or fried chicken. Traditional cornbread recipes call for dairy products like milk, butter, and eggs. However, it is possible to make delicious cornbread that is also dairy-free. Dairy-free cornbread is a great option for people who are lactose intolerant, vegan, or simply looking to reduce their dairy intake. With the right ingredients and a few simple substitutions, you can create a moist and flavorful cornbread that is every bit as good as the traditional version.

Steps:
- 1. Put all the dry ingredients in a large bowl. Stir the dry ingredients around to mix them together.
- 2. In a medium size bowl, mix all of the wet ingredients. Once you have stirred and mixed the wet ingredients you can now add them to your dry ingredients until combined.
- 3. I use a large ungreased glass casserole dish about 9 x 13. Put it an oven at 400 degrees on the middle rack. Just make sure you have about 2 inches on the sides of the dish as it will rise quite a bit. Or you could try to divide into two 8x8 dishes. Cook between 20-30 minutes. Test it with a toothpick in several places in the middle. If it comes out clean you should be good. My oven took me about 30 minutes. But it will depend on what size dish you use and your oven. But start checking around 20 min. I found using the convection made it brown faster than it was actually cooking it. Serve with honey butter and chili. So yummy!
Tips:
- Choose the Right Cornmeal: Use a finely ground cornmeal for a smooth and creamy cornbread. Coarsely ground cornmeal will give you a more rustic texture.
- Don't Overmix the Batter: Overmixing the batter will result in a dense and dry cornbread. Mix just until the ingredients are combined.
- Bake in a Hot Oven: Preheat your oven to the highest temperature it can reach before baking the cornbread. This will help it rise and give it a crispy crust.
- Use a Cast Iron Skillet: If you have one, baking your cornbread in a cast iron skillet will give it a delicious crispy bottom.
- Add Some Sweetness: If you like your cornbread on the sweeter side, add some honey, maple syrup, or sugar to the batter.
- Spice It Up: For a savory cornbread, add some chopped jalapeƱos, chili powder, or cumin to the batter.
- Serve It Warm: Cornbread is best served warm out of the oven. You can also toast it or grill it for a crispy crust.
