Time 1h

Yield 30 sticks

Number Of Ingredients 7

1/2 cup milk
1 egg
1 (8 1/2 ounce) box Jiffy cornbread mix
1 1/4 cups unbleached flour
1 1/2 teaspoons bread machine yeast
1/4 cup butter
1/4 cup cornmeal (optional)

Steps:

  • Heat milk to lukewarm. Add to bread-machine pan along with the egg, cornbread mix, flour, and yeast. Set on "Dough" cycle.
  • When complete, remove dough to floured surface. Roll into 15 x 8-inch rectangle.
  • Cut ¾-inch strips the short way. (See picture above.) Dip in butter, then cornmeal, if desired. Knock off excess cornmeal. Twist and lay onto greased cookie sheet or silicone mat. Don't crowd. I use two cookie sheets.
  • Cover twists and set in warm place to rise about 30 minutes.
  • Preheat oven to 375 degrees.
  • Bake 12-15 minutes until golden.

Tips:

  • Choose the right cornmeal. Stone-ground cornmeal will give your cornbread a more rustic flavor and texture, while all-purpose cornmeal will produce a lighter bread.
  • Don't overmix the batter. Overmixing will make your cornbread tough. Just mix until the ingredients are combined.
  • Let the batter rest. Letting the batter rest for a few minutes before baking will allow the cornmeal to absorb the liquid and produce a more tender bread.
  • Bake the cornbread in a hot oven. A hot oven will help the cornbread to rise and brown properly.
  • Don't overbake the cornbread. Cornbread is best when it is slightly moist in the center. A toothpick inserted into the center should come out with just a few crumbs attached.
  • Serve the cornbread warm. Cornbread is best served warm, but it can also be reheated in the oven or microwave.

Conclusion:

Cornbread is a delicious and versatile bread that can be enjoyed with a variety of meals. With so many different recipes to choose from, there is sure to be a cornbread recipe that everyone will love.
