2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 tablespoons caraway seeds
2 cups 4% cottage cheese
1/2 teaspoon baking soda
1/4 cup sugar
2-1/2 teaspoons salt
2 large eggs, beaten
4-1/2 to 5 cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a large bowl, dissolve yeast in water. Add caraway seeds. In a small saucepan, heat cottage cheese until lukewarm; add baking soda and mix well. Stir into yeast mixture. Add sugar, salt and eggs; mix well. Gradually stir in enough flour to form a soft dough Cover and let rise in a warm place until doubled, about 1 hour. Stir down. , Turn onto a lightly floured surface. Divide into 24 pieces. Place in well-greased muffin cups. Cover and let rise until doubled, about 35 minutes. , Bake at 350° for 18-20 minutes. 4 eggs
1/2 tbsp vanilla extract
1/2 cup sugar
1/2 tbsp baking powder
1 tsp baking soda

4 cup flour
1 egg ((to brush the tops))
1/4 cup sugar ((to sprinkle to tops))

Steps:

  • Combine together cottage cheese, sugar, eggs and vanilla extract. Blend using a blender, mixer or a food processor.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm 4% cottage cheese (110° to 115°)
2 tablespoons sugar
1 tablespoon butter, softened
2 teaspoons caraway seeds
1 teaspoon salt
1/4 teaspoon baking soda
2-1/3 cups all-purpose flour
1 large egg, room temperature

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the cottage cheese, sugar, butter, caraway seeds, salt, baking soda and 1-1/3 cups flour. Beat on medium speed for 3 minutes. They were perfect for cold roast pork sandwiches! The dough is a bit sticky when you work with it, but I think that's the secret to the texture. I mixed the ingredients in my food processor, then finished kneading by hand.

1/2 ounce fresh yeast or 1/2 ounce active dry yeast
1 cup rye flour
3 cups bread flour
1 tablespoon salt
1/3 cup sugar
2 cups cottage cheese
2 eggs
1/4 cup butter
1/2 cup milk (or enough for dough to form)
2 tablespoons caraway seeds

Steps:

  • Cut yeast and butter into flour, salt and sugar just as if you were making a pastry crust.

2 1/4 teaspoons active dry yeast
5 tablespoons extra-virgin olive oil
3 cups bread flour
2 teaspoons caraway seeds
3 tablespoons honey
1 tablespoon blackstrap molasses
1 tablespoon kosher salt
1 cup whole-milk cottage cheese
1 large egg

Steps:

  • Prepare the yeast: In a medium bowl, dissolve the yeast in 1/2 cup warm water (between 110 to 120 degrees F). Set aside.
  • Make the dough: Oil a medium bowl with 1 tablespoon of the olive oil. Set aside.
