DRY JELL-O SALAD (JELLO) COTTAGE CHEESE FRUIT SALAD
I could eat the whole bowl by myself! This is a great recipe for those who don't like Jell-O since you use it dry and it gives a totally different texture than traditional Jell-O salads. Hint: if you use orange flavored Jell-O use mandarin oranges instead of pineapple.

COTTAGE CHEESE JELLO
As our family expands each year with marriages, etc...we try to incorporate favorite dishes of the new in-laws to our holiday celebrations, so that they feel a part of our event and not an outsider. This is a recipe my sister-in-law's grandmother always made and I am happy to add it to our collection.

GREEN JELLO WITH COTTAGE CHEESE AND PINEAPPLE
I don't know where Grandma got this recipe. It, and many like it, were popular back in the 1950's and 60's. It may have originated with the Jello Company. Every church supper and family gathering had a similar dish and everyone had their variations. This was one of my Grandma's favorites.

COTTAGE CHEESE JELLO FRUIT SALAD
TIP: If you like it more fruity, use less cool whip. If you like it more creamy, use more cool whip. Also, you can "holiday" it up or customize it just by changing flavors. For Christmas, use green jello and add cherries. For Halloween, use orange jello and add mandarin oranges, etc.

TRISH'S LIME JELLO COTTAGE CHEESE AND PINEAPPLE SALAD
Steps:
- Mix Jello, hot water and pineapple together and let partially set. Fold in condensed milk, mayonnaise, cottage cheese and nutmeats. Put in mold and let set in refrigerator. (Bottom of mold may be lined with sliced pineapple and maraschino cherries.) Cut and serve on lettuce leaf or endive. Serves sixteen.
Tips:
- Use unflavored gelatin for a neutral taste that will allow the flavors of the cottage cheese and fruit to shine through.
- If you don't have gelatin on hand, you can use agar agar, a vegan and vegetarian-friendly gelling agent. Agar agar is derived from seaweed and has a slightly firmer texture than gelatin.
- For a smoother texture, blend the cottage cheese until it is completely smooth before adding it to the gelatin mixture.
- If you are using fruit, make sure to drain any excess liquid before adding it to the gelatin mixture. This will help to prevent the jello from becoming too watery.
- For a more vibrant color, use fresh fruit. You can also add a few drops of food coloring to the gelatin mixture.
- Chill the jello for at least 4 hours, or overnight, before serving. This will allow the jello to set properly.
Conclusion:
Cottage cheese jello is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be customized to your liking. With a variety of flavors and toppings to choose from, there is sure to be a cottage cheese jello recipe that everyone will enjoy.
