1 (16 ounce) package small curd cottage cheese
1 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon fresh lemon juice
1 pinch salt
3 egg yolks
3 egg whites
1 (12 fluid ounce) can evaporated milk
1 ½ cups milk
2 (9 inch) pie shell

Steps:

  • Place cottage cheese in strainer and let drain for about 1 hour or until most of liquid has been drained.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine cottage cheese, sugar, flour, lemon juice, salt, egg yolks, evaporated milk, and regular milk. Mix well.
  • In a separate clean bowl, beat egg whites until firm. Fold into batter until smooth. Pour into pie crusts.

2 egg yolks
1 (3 ounce) package egg custard mix
2 teaspoons vanilla extract
¾ cup milk
¼ teaspoon lemon juice
3 tablespoons butter, melted
2 egg whites, stiffly beaten
1 (9 inch) pie shell

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).

1 ½ Cups small curd cottage cheese. Large curd isn't as smooth in the finished pie. Low-fat also works well.
7/8 Cup Sugar.
Can use a blend of sugar and sugar substitute.
Do not use Equal or Sweet N Low.
2 Large Eggs, separated.
2T Half and Half, or heavy cream.
2T Butter. Margarine should not be substituted.
3T Flour, all purpose.
1T Real Vanilla Extract.
1 dash (1/8 t) Salt.

Steps:

  • Mash cottage cheese with a fork. This will leave some solids which will give the pie some "tooth." Using a blender or processer will result in a smooth consistency. Beat egg whites to soft peaks. Mix well all other ingredients. Fold-in whites. Should be able to see some whites distinct from the rest. Pour mixture into one, deep, ready-made Graham Cracker pie shell. Bake at 350* for 35-40 minutes until top is lightly browned. Filling should still be a little loose, but will firm up as it cools. Best served at room temp.

2 c cottage cheese use good brand (low fat will not work )
2 c whole milk
2/3 c sugar
1 tsp vanilla extract
2 Tbsp all purpose flour
1/4 tsp cinnamon
