Number Of Ingredients 8

1/2 stick butter (4 Tbl.)
1 small sweet onion, cut into thin wedges
1 medium regular red potato, unpeeled, 1/2-3/4″ dice
1/4 tsp. coarse ground black pepper
3 strips crisp-cooked bacon, thinly sliced
1/2 tsp. finely minced garlic
1 1/2 tsp. dry Hidden Valley Ranch Salad Dressing or Dips Mix (either work)
1 (14.5 oz.) can green beans, drained

Steps:

  • In medium saucepan or small frying pan, melt butter. Add onion, potato and pepper. Sauté over medium heat until potatoes are fork tender. (I like to cover with a lid and stir every so often.) Add bacon, garlic, and Ranch Mix. Stir in well. Fold in green beans and heat through, simmering, stirring gently and occasionally so that you don't wreck them. Add pepper to taste. Add salt only if desired. *Ranch Mixes are salty.

Time 1h25m

Yield 6 servings

Number Of Ingredients 5

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

Tips:

  • To save time, use pre-cut bacon and frozen green beans.
  • If you don't have ranch dressing mix, you can make your own by combining 1 cup mayonnaise, 1/2 cup sour cream, 1/4 cup chopped fresh parsley, 1/4 cup chopped fresh dill, 1/4 cup chopped fresh chives, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  • To make the dish even more flavorful, add 1/2 cup chopped onion and 1/2 cup chopped red bell pepper to the skillet with the bacon.
  • If you like your green beans crispy, cook them for a shorter amount of time. If you prefer them softer, cook them for a longer amount of time.
  • Serve the green beans and potatoes with your favorite dipping sauce, such as ranch dressing, ketchup, or barbecue sauce.

Conclusion:

This recipe for country ranch green beans and potatoes with bacon is an easy and delicious side dish that is perfect for any occasion. The green beans and potatoes are cooked in a creamy ranch sauce, and the bacon adds a smoky flavor that takes the dish to the next level. This dish is sure to be a hit with your family and friends.
