TEXAS COWBOY STEW

Texas Cowboy Stew image

Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its Southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

Yield Makes 2 servings

Number Of Ingredients 13

1/2 pound boneless top loin steak (New York strip or shell), trimmed of excess fat and cut into 1-inch pieces
1 tablespoon olive oil
1 medium onion, chopped
2 carrots, thinly sliced
2 celery ribs, halved lengthwise and thinly sliced crosswise
3 garlic cloves, finely chopped
2 teaspoons finely chopped thyme
1/2 pound Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
1 cup diced tomatoes with some juice (from a 14-oz can)
1 3/4 cups beef broth
2 1/4 cups water
2 cups chopped kale leaves
1 cup medium egg noodles, cooked

Steps:

  • Pat steak dry. Heat oil in a 4-to 5-quart heavy pot over medium-high heat until it shimmers. Cook steak until browned on all sides and medium-rare, about 3 minutes, then transfer to a plate.
  • Cook onion, carrots, celery, garlic, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper in pot over medium heat, stirring occasionally, until softened but not browned, about 8 minutes.
  • Stir in potatoes, tomatoes with juice, broth, and water and simmer, partially covered, until potatoes are tender, about 15 minutes. Stir in kale and cook, uncovered, until tender, about 5 minutes. Stir in steak with meat juices, cooked noodles, and salt and pepper to taste.

Tips:

  • Choose the right steak: For the best flavor, use a well-marbled steak such as a ribeye or strip steak. Look for steaks that are at least 1 inch thick so they can withstand the cooking process and stay juicy.
  • Season the steak well: Before cooking, season the steak generously with salt and pepper. You can also add other spices or herbs, such as garlic powder, onion powder, or paprika.
  • Cook the steak over high heat: Sear the steak in a hot skillet or grill over high heat until it is browned on all sides. This will help to develop a nice crust and seal in the juices.
  • Let the steak rest: After cooking, let the steak rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the steak and make it more tender.
  • Add a variety of vegetables: This soup is a great way to use up leftover vegetables. Add any vegetables that you like, such as potatoes, carrots, celery, onions, or green beans.
  • Use a flavorful broth: The broth is the base of the soup, so make sure to use a good quality broth. You can use beef broth, chicken broth, or vegetable broth.
  • Simmer the soup until the vegetables are tender: Bring the soup to a boil, then reduce the heat to low and simmer until the vegetables are tender. This will usually take about 30 minutes.
  • Serve the soup with your favorite toppings: Serve the soup with a dollop of sour cream, a sprinkle of shredded cheese, or a few crackers.

Conclusion:

Cowboy Steak and Vegetable Soup is a hearty and flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own tastes. So next time you are looking for a delicious and satisfying meal, give this soup a try!
