ULTIMATE CRAB AND SPINACH MANICOTTI WITH PARMESAN CHEESE SAUCE
You can cheat and make this with imitation crabmeat but of course the real stuff is better, if you are using frozen crabmeat make certain to squeeze out any excess moisture before using for this recipe --- if you are a spinach lover then add in the full box of spinach if not just use half a box as the spinach tends be over powering, you can use 1 pound fresh spinach in place of frozen --- you can stuff the shells and refrigerate until ready to bake, and this is also great with a red sauce instead of the Parmesan cheese sauce :)

Steps:
- Combine crab meat with undrained tomatoes.
- Let soak while cooking manicotti according to package directions.
- When manicotti is done, drain crab/tomato mixture and blend with neufchatel.
- Stuff manicotti with crab mixture and arrange in a 10 x 13 casserole dish.
- Pour alfredo evenly over manicotti.
- Top with shrimp and bake at 375F for 15-20 minutes.
Tips:
- Choose fresh, high-quality seafood: Fresh crab and shrimp will give your manicotti the best flavor. Look for seafood that is firm and has a mild, briny smell.
- Don't overcook the seafood: Overcooked seafood will be tough and chewy. Cook the crab and shrimp just until they are opaque and cooked through.
- Use a creamy, flavorful sauce: The sauce is what will really make your manicotti shine. Choose a sauce that is rich and creamy, with a hint of acidity. A béchamel sauce or a tomato cream sauce are both good options.
- Don't overstuff the manicotti shells: If you overstuff the shells, they will burst open during baking. Fill the shells just until they are full, but not so full that they are bulging.
- Bake the manicotti until they are golden brown: The manicotti should be baked until they are golden brown and bubbly. This will ensure that they are cooked through and that the cheese is melted and gooey.
Conclusion:
Crab and shrimp manicotti is a delicious and elegant dish that is perfect for a special occasion. With its creamy sauce, tender seafood, and cheesy filling, this dish is sure to impress your guests. So next time you're looking for a seafood dish that is both delicious and easy to make, give crab and shrimp manicotti a try.
