Time 1h5m

Number Of Ingredients 15

3 tablespoons unsalted butter
1/4 cup finely chopped celery, plus more for serving
2 scallions, white and green parts, thinly sliced3 tablespoons prepared horseradish, drained slightly
Finely grated zest from 1/2 a lemon
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
3/4 cup coarsely crushed crackers (recommended: Keebler Club)
2 to 3 tablespoons mayonnaise
8 ounces lump or Dungeness crabmeat, picked over for shells
Celery leaves, for serving
1/3 cup ketchup
3 tablespoons prepared horseradish
3/4 teaspoon Worcestershire sauce
Juice from 1/2 a lemon
1/2 teaspoon hot sauce, or to taste

Steps:

  • 1. For the crab cakes: Heat a small skillet over medium-low heat with 1 teaspoon butter. Add the celery and scallion and cook until just translucent, about 3 minutes. Season with a pinch of salt and a little pepper. Cool slightly.
  • 2. Put vegetables in a large bowl along with 1/4 cup of the crushed crackers, the mayonnaise, horseradish and lemon zest. Mix everything together, season well with salt and pepper. Gently fold in the crabmeat taking care to keep some of the lumps intact. Divide the mixture into 4 (1/2-inch) patties. Put the remaining cracker crumbs in a shallow dish and coat the patties evenly with the crumbs, cover, and refrigerate for at least 30 minutes to allow the crab cakes to set up.
  • 3. For the sauce: Whisk all the ingredients in a bowl, season with pepper and set aside.
  • 4. Melt the remaining 2 tablespoons butter in a large non-stick skillet over medium-high heat. Cook the crab cakes until golden brown and heated through, turning once, about 2 minutes per side. Serve crab cakes with the sauce garnished with more chopped celery and tender celery leaves, as desired.

2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
3/4 cup tomato juice
1/4 cup plus 2 tablespoons vodka
2 tablespoons lemon juice
2 teaspoons hot sauce
2 teaspoons Worcestershire sauce
8 ounces (2 sticks) unsalted butter, softened
1 1/4 cups granulated sugar
1 tablespoon horseradish sauce
2 eggs
1 egg yolk
Cayenne Pepper Buttercream, recipe follows
Sprinkles or other favorite decorations, for topping
3 2/3 cups powdered sugar
8 ounces (2 sticks) unsalted butter, softened
1 teaspoon celery salt
2 tablespoons plus 2 teaspoons milk
2 teaspoons lemon juice
2 teaspoons vanilla extract
1 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a regular cupcake or muffin pan with 12 cupcake liners.
  • Sift the flour, baking powder, salt, 1/4 teaspoon black pepper and cayenne pepper into a medium bowl. Set the bowl aside. In a small bowl, combine the tomato juice, 1/4 cup vodka, lemon juice, hot sauce and Worcestershire sauce. Set the bowl aside. In the bowl of an electric stand mixer with a paddle attachment, cream the butter with the granulated sugar and horseradish sauce, about 5 minutes. Turn the mixer to the lowest speed and add the flour and tomato juice mixtures, alternating between the two, beginning and ending with the flour. Mix until just combined. • Put the Cayenne Pepper Buttercream into a pastry bag and cut 1/2-inch off the tip. Frost the cupcakes once they are completely cool. Top with your favorite sprinkles or decoration.
  • Sift the powdered sugar into a medium bowl. In the bowl of an electric stand mixer with a paddle attachment, cream the butter and celery salt together, about 1 minute. Then add the powdered sugar and milk, alternating between the two. Beat until combined. Scrape the sides of the bowl. Add the lemon juice, vanilla and cayenne pepper. Mix until combined. Categories     Onions

Time 45m

Yield 3 wide mouth pint jars

Number Of Ingredients 14

1 teaspoon salt
1 teaspoon celery seed
1/2 teaspoon dill seed
1/2 cup sugar
1/2 cup apple cider vinegar
1/2 cup water
1/2 cup vodka (pepper or citrus)
1 tablespoon grated fresh horseradish
1 lemon, just the zest cut in strips
6 garlic cloves, left whole
1 teaspoon peppercorn
2 jalapenos, sliced lengthwise into quarters
1 1/2 lbs green beans, washed n trimmed to fit into wide mouth pint jars
1/2 large sweet onion, cut into 1/2 inch slices

Steps:

  • Bring a large pot of water with the 1 teaspoon salt to a boil over medium heat. Add the beans and onion slices. Cook until the beans begin to turn bright green and are just tender, about 3 to 4 minutes. Remove from heat and drain. Rinse and drain well.
  • In a small saucepan, over high heat, bring the first 7 ingredients to a boil, then turn off the heat, stirring until dissolved. Remove from heat.
  • Distribute the grated fresh horseradish, lemon zest, garlic cloves, whole peppercorns, jalapenos slices among the jars.
  • Pack beans and onions in sterilized jars then cover with the vinegar mixture.
  • Fill to within 1 inch of the top. The beans should be covered and there should still be 1/2 inch of airspace left in the top of each jar.
  • Put the lids and rings on.
  • Put the lids on each jar and seal them by putting a ring on and screwing it down snugly (but not with all your might, just "snug").
  • Using the jar tongs, put the pint jars in the canner and keep them covered with at least 1 inch of water. Keep the water boiling.
  • Boil them for.
  • 5 minutes for 0-1,000 ft.,.
  • 10 minutes 1,001-6,000 ft.,.
  • 15 minutes above 6,000 ft.
  • Lift the jars out of the water and let them cool without touching or bumping them in a draft-free place overnight.
  • Then remove the rings if you like. Once the jars are cool, you can check that they are sealed verifying that the lid has been sucked down. Just press in the center, gently, with your finger. If it pops up and down (often making a popping sound), it is not sealed. If you put the jar in the refrigerator right away, you can still use it.
  • Give it a weeks time for the seasonings to be absorbed into the pickled beans.
  • Process in a hot water bath, remove and cool in a draft free spot for 24 hours.
  • You can also put them in sterilized jars and refrigerate instead of doing the canning process. Let flavors meld for 1 week. Just keep under refrigeration and eat within 1 month.

SPICY BLOODY MARY MIX

Spicy Bloody Mary Mix image

My father-in-law first introduced me to this homemade bloody mary mix. It is very similar to what you'd buy in a store. Made as is, it is very spicy. You can customize it to your taste by cutting back on the pepper and hot sauce; I like about half the pepper and hot sauce. Enjoy this wonderful mix! It is so easy and much cheaper than buying pre-made mix.
