3 pounds apples, peeled, cored, and cut into 1/2-inch-thick slices (try a combination of Gala, Golden Delicious, and McIntosh)
1 cup fresh or frozen cranberries
1 cinnamon stick
1/2 cup sugar
3/4 cup water
2 teaspoons freshly squeezed lemon juice

Steps:

  • In a large saucepan, combine apples, cranberries, cinnamon stick, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
  • Remove from heat; discard cinnamon stick. Stir in lemon juice.

1 cup unsweetened applesauce
⅓ cup vegetable oil
1 eggs, beaten
2 cups all-purpose flour
½ cup white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup fresh or frozen cranberries, chopped
½ cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
  • In a small bowl, mix together applesauce, oil and egg. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Make a well in the center, and pour in egg mixture. Stir until just moistened. Fold in cranberries and pecans. Spoon into muffin cups, 2/3 full.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.

2 tablespoons extra-virgin olive oil
2 pounds ground turkey or chopped leftover turkey
Salt and freshly ground black pepper
2 teaspoons poultry seasoning
2 1/2 pounds sweet potatoes, peeled and cubed
1 onion, cut into 1-inch dice
2 carrots, peeled and grated
4 ribs celery, chopped
4 tablespoons butter, divided
2 tablespoons all-purpose flour
2 cups turkey or chicken stock (recommended: Kitchen Basics)
A few dashes Worcestershire sauce
1 (10-ounce) box frozen peas
1 very ripe banana
A few dashes hot sauce
2 cups sharp shredded yellow Cheddar
1 1/2 cups all natural apple sauce
1/2 cup good quality whole berry cranberry sauce (recommended: Ocean Spray)
2 pinches ground cinnamon
2 teaspoons orange zest
2 pints French vanilla ice cream
Whipped cream
1/4 cup chopped toasted pecans, available on baking aisle

Steps:

  • Preheat oven to 425 degrees F.
  • In a deep skillet or a Dutch oven heat 2 tablespoons oil over high heat. Add meat and break up with a wooden spoon, season with salt and pepper and poultry seasoning.
  • Place sweet potatoes in a pot, cover with water, cover pot, bring to a boil, add salt and cook 15 minutes until tender.
  • Add onions, carrots and celery into the turkey. Stir, and cook for 5 minutes. While vegetables are cooking, heat 2 tablespoons butter in a small pot over medium heat. Add flour to melted butter and whisk 1 minute. Whisk in stock and season with salt, pepper and Worcestershire. Cook a few minutes to thicken.
  • Stir peas into meat and turn heat off.
  • Drain potatoes and return pot to heat. Add remaining 2 tablespoons of butter and melt over medium heat. Peel and slice banana and add potatoes to the pot. Season the potatoes with salt and pepper and a few dashes hot sauce. Mash potatoes and banana to combine, adjust seasoning. Top the meat with the potatoes. Cover potatoes with cheese and place in the oven to melt cheese, about 5 minutes.
  • For dessert, warm the apple and cranberry sauces in microwave or in a small pot over low heat and season with cinnamon and orange zest. Place a little cran-applesauce in the bottom of a sundae dish, top with 2 scoops ice cream, more sauce and whipped cream, garnish with chopped pecans.

Base recipe was found in the All You Magazine but I've tweaked it to make it my own. This is a full flavored cake with a lemony glaze topping which I found to take this cake just over the top of expectations. Of course you can omit the glaze and just serve as a loaf cake for breakfast. The original recipe does not include nuts but I really enjoyed it with some chopped walnuts so I've placed that as optional to this recipe. It also called for raisins but I used Craisins instead. Please note it is very important to use a thicker applesauce for this recipe - using a thin commercial canned sauce can cause the batter to become too thin and not allow the cake loaf to rise properly while baking.

1 cup sugar
1 large egg, at room temperature
1/2 teaspoon baking soda
1 cup thick unsweetened applesauce

  • Preheat oven to 350F and prepare a 9x5 inch loaf pan with butter (or cooking spray) and then line bottom of loaf pan with parchment and butter the paper.
  • Beat butter and sugar with a mixer until light and fluffy. Beat in egg.
  • Stir baking soda into applesauce.
  • Mix dry ingredients, theen add to butter mixture in 3 additions, alternating with applesauce.
  • Stir in Craisins (and walnuts if using).
  • Pour batter into prepared pan and bake for 45-50 minutes (or until toothpick test passes).
  • Cool in pan on a wire rack for 10-15 minutes then turn out onto rack.
  • Make glaze by mixing lemon juice and confectioner's sugar and spoon glaze over cooled cake (this step is optional if you are not using it as a dessert).

a 3-inch strip of lemon zest removed with a vegetable peeler
2 tablespoons unsalted butter

Steps:

  • In a heavy saucepan cook the apples, the cranberries, the sugar, the apple juice or water, the cinnamon stick, and the zest over moderate heat, stirring, for 15 minutes, or until the apples are very soft. Discard the cinnamon stick and the zest, force the apple mixture through the medium disk of a food mill into a bowl, and stir in the butter. Serve the applesauce warm or chilled. The applesauce keeps, covered and chilled, for 1 week.

1 tablespoon light corn syrup
Pinch of coarse salt
1 vanilla bean, split and seeds scraped

Dried Apple Slices, for serving

  • Prepare an ice-water bath. Stir together sugar and 1 cup water in a medium saucepan. Bring to a boil, stirring until sugar is dissolved. Remove from heat; pour into a metal bowl set in ice-water bath. Let cool completely, stirring occasionally.
