Time 1h55m

Yield 8 servings of 2 pastries each

Number Of Ingredients 8

2 oranges, juiced
1 lime, juiced
3 tablespoons brown sugar
1 cup dried cranberries (recommended: Craisins)
1/8 cup raspberry liqueur (recommended: Chambord) or German cherry brandy (recommended: Kirschwasser)
8 sheets phyllo dough (based on 18 by 14-inch sheets which are often sold in packs of 18 to 20 for thickness number 4)
1/4 cup melted butter
1/2 cup mascarpone cheese

Steps:

  • In a saucepan, combine orange juice, lime juice, brown sugar, dried cranberries, and raspberry liqueur (or brandy). Reduce liquid until thick and syrupy. Place in refrigerator to let cool and jell up.
  • Preheat oven to 350 degrees F.
  • If phyllo was frozen, make sure it is completely defrosted before handling it. Once removed from package, you will need to cover phyllo with waxed paper and a damp towel to prevent it from drying out. Working with 1 sheet at a time, lay out each dough sheet and brush on butter. Fold in half, brush again, fold in half, cut in half. (Each dough sheet should yield 2 rectangles, roughly 4 by 4 inches, so you will have 16 squares.) Spoon a small amount of mascarpone cheese and a spoonful of the cranberry mix in the center of each square. Bring up corners to form into a small square packet and brush more butter on top. Bake in until golden brown.

Tips:

  • Select ripe and fresh cranberries: Use plump and firm cranberries for the best flavor and texture. Avoid any cranberries that are bruised or soft.
  • Choose oranges with a deep orange color: Look for oranges that have a vibrant and deep orange color, as they tend to be sweeter and juicier.
  • Use a variety of raspberries: Feel free to experiment with different types of raspberries, such as red, black, or golden raspberries, to add a variety of flavors and colors to your juice.
  • Adjust the sweetness to your preference: If you prefer a sweeter juice, add more honey or maple syrup to taste. For a tarter juice, reduce the amount of sweetener or omit it altogether.
  • Use a high-quality blender: A good blender will ensure that your juice is smooth and well-blended, without any chunks or pulp.
  • Strain the juice for a smoother texture: If you prefer a smoother juice, strain it through a fine-mesh sieve or cheesecloth to remove any solids or pulp.

Conclusion:

The combination of cranberries, raspberries, and oranges in this juice recipe creates a vibrant and refreshing beverage that is packed with flavor and nutrients. With its tangy, sweet, and slightly tart taste, this juice is perfect for any occasion. Whether you're looking for a healthy and delicious breakfast drink, a refreshing afternoon pick-me-up, or a festive holiday beverage, this cran-raspberry-orange juice is sure to delight your taste buds. Experiment with different types of berries and citrus fruits to create your own unique blend, and enjoy the goodness of this homemade juice.
