Steps:
- 1. Combine wafer crumbs and butter. Press firmly onto bottom and up sides of 9-inch pie plate. Chill.
- 2. Beat cream cheese until fluffy in a large bowl. Gradually add sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Reserve 1/2 cup cranberry sauce. Add remaining sauce to cream cheese mixture. Pour into prepared crust. Cover.
- 3. Freeze 6 hours or until firm. Just before serving, garnish with whipped cream and reserved cranberry sauce.
Tips:
- Prepare the crust in advance: To save time, make the graham cracker crust up to 2 days ahead and store it in the refrigerator. This will allow the crust to firm up and make it easier to handle.
- Use high-quality cream cheese: For the best flavor and texture, use full-fat cream cheese. Avoid using low-fat or non-fat cream cheese, as it will not produce the same rich and creamy filling.
- Soften the cream cheese before using: To ensure a smooth and lump-free filling, make sure the cream cheese is softened to room temperature before mixing it with the other ingredients.
- Use fresh cranberries: Fresh cranberries will give your pie the best flavor. If you only have frozen cranberries, thaw them completely before using.
- Don't overcook the cranberries: Cook the cranberries just until they burst. Overcooking them will make them tough and chewy.
- Chill the pie before serving: This will allow the flavors to meld and the filling to set. For the best results, chill the pie for at least 4 hours, or overnight, before serving.
Conclusion:
This classic cranberry cream cheese pie is a delicious and festive dessert that is perfect for any occasion. With its creamy filling, tart cranberries, and buttery graham cracker crust, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to serve, give this cranberry cream cheese pie a try – you won't be disappointed!
