CRANBERRY OAT BARS

Cranberry Oat Bars image

These bars are one part cookie, and one part granola bar. They're chewy and caramel-y and earthy and studded with tangy, dried cranberries.

Provided by The Hungry Mouse

Yield One 8"x8" pan

Number Of Ingredients 6

8 Tbls. butter (that's 1 stick)
1/2 cup dark brown sugar, packed
1/4 cup golden syrup
2 1/3 cups quick-cooking oats (NOT instant or old-fashioned)
3/4 cup sweetened, dried cranberries (a.k.a. Craisins)
Pinch of salt

Steps:

  • Lightly grease an 8-inch x 8-inch baking pan. Line with a square of parchment paper, so that the paper is hanging over the sides. Set it aside.
  • Preheat your oven to 350 degrees.
  • Toss the sugar in a medium-sized pot. Add the butter and the golden syrup. Set the heat on medium. Whisk constantly as the butter and sugar melt.
  • Keep whisking until you have a uniform paste
  • Remove the pot from the heat. Toss in the oats, salt, and dried cranberries. Stir until the oats and cranberries are coated and the mixture is uniform.
  • Scoop out into your prepared pan. Smoosh it down with the back of a spoon until the surface is flat and firm. Be sure to press down all the corners, too. You want it dense when it goes into the oven so it stays together.
  • Pop the pan into your preheated, 350-degree oven for about 25 minutes, or until the edges are light brown and it smells nice and toasty.
  • Cool it in the pan on a rack for about 5 minutes. Slice however you like.
  • Let the bars cool completely in the pan. (They'll kind of fall apart until they cool.)
  • When they're cool, break them apart to serve. You can leave the bars in the pan, or lift them out by the parchment paper. Enjoy!

These are a great alternative to store bought cereal and granola bars. They pack well and make an easy, quick snack or breakfast on the go. I like to use dried cranberries, but you could substitute any soft dried fruit like cherries or apricots.

Provided by Marmish

Categories     Breakfast

Time 20m

Yield 20 bars

Number Of Ingredients 8

2 cups raisins
2 cups oatmeal
2 1/2 cups Rice Krispies
1 cup peanuts
1 cup dried cranberries or 1 cup other dried fruit
1/2 cup butter
1/2 cup peanut butter
1 (10 1/2 ounce) bag marshmallows

Steps:

  • Preheat oven to 350°.
  • Toast oatmeal on large baking sheet 13 x 9 pan or 15 x 10 jellyroll pan for 10 minutes.
  • Add raisins and Rice Krispies and toast another 5 minutes.
  • Add peanuts and dried fruit and set aside.
  • In a large pan, melt butter, peanut butter and marshmallows over low heat.
  • When smooth and combined, add oatmeal mixture.
  • Stir to coat.
  • Press firmly into 9x13 pan.
  • Cool and cut into 20 bars.
  • Note: I use a large dutch oven type pot to make mixing easier.
  • You can also reduce or eliminate butter if you want to lower the fat.

Tips:

  • Use Old-Fashioned Oats: For a chewy texture, use old-fashioned oats instead of quick or instant oats.
  • Toast the Oats: Toasting the oats before baking enhances their flavor and creates a more crispy texture.
  • Use a Variety of Nuts: Feel free to mix and match different types of nuts for added flavor and texture. Chopped walnuts, almonds, and pecans are popular choices.
  • Add Dried Fruits: Dried cranberries, raisins, and cherries are great additions to these granola bars for a sweet and tangy flavor.
  • Use Pure Maple Syrup: Pure maple syrup adds a rich, natural sweetness to the granola bars. You can substitute honey if you prefer.
  • Press the Mixture Firmly: When pressing the granola mixture into the pan, make sure to press it firmly and evenly to ensure it holds together well.
  • Let the Granola Bars Cool Completely: Allow the granola bars to cool completely before cutting them into pieces. This will help them stay intact and prevent them from crumbling.

Conclusion:

These Cranberry Nut Oatmeal Granola Bars are an easy and delicious snack or breakfast option that can be enjoyed by people of all ages.
