CRANBERRY-NUT PIE

Cranberry-Nut Pie image

This recipe comes from a 1968 recipe book titled,"Favorite Recipes From Church of GOD Ladies". Each of the recipes has the ladies' name and home town and I will include this with the recipe and if you know or are related to this person, I would really like to know. The recipes I post from this cookbook are ones I have tried and...

Categories     Pies

Number Of Ingredients 7

2 c cranberries
1 c pecans, chopped
1 1/2 c sugar
2 eggs
1 c flour
1 stick margarine, melted
1/4 c shortening, melted

Steps:

  • 1. Butter one 10 or 11-inch pie plate.
  • 2. Cover bottom of plate with cranberries; sprinkle with pecans and 1/2 cup sugar. Let set.
  • 3. Mix eggs, remaining sugar, flour, margarine and shortening; pour over pecans and cranberries.
  • 4. Bake for 1 hour at 325 degrees or till brown around edges. Mrs. Jean Collier, Clerk Houston Alabama Church of God LWWB Double Springs, Alabama

Tips:

  • Use fresh cranberries. Fresh cranberries have a tart and juicy flavor that is perfect for this pie. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
  • Chop the nuts finely. This will help them distribute evenly throughout the pie and prevent them from clumping together.
  • Use a combination of nuts. This will give the pie a more complex flavor and texture. Some good options include walnuts, pecans, almonds, and hazelnuts.
  • Don't overmix the dough. Overmixing the dough will make it tough. Mix it just until it comes together.
  • Chill the dough before rolling it out. This will make it easier to work with and prevent it from sticking to your work surface.
  • Bake the pie until the crust is golden brown and the filling is bubbling. This will take about 45-50 minutes.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

Cranberry nut pie is a delicious and festive dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. The tartness of the cranberries is perfectly balanced by the sweetness of the sugar and the richness of the nuts. This pie is sure to be a hit at your next gathering.
