I had to watch my grandmother make this dish in order to write down the recipe. She never used one and just went with what felt right! It is so creamy and delicious and easily modified to suit your taste. I like a little more Cayenne, my kids...not so much!

Tips:

  • Use fresh ingredients whenever possible. This will result in the best flavor and texture for your dish.
  • Don't overcook the crawfish. Crawfish should be cooked just until they are opaque and pink. Overcooked crawfish will be tough and chewy.
  • Be careful when adding salt. Crawfish can be salty, so it's important to taste the dish before adding additional salt.
  • Serve crawfish linguine immediately. This dish is best enjoyed when it is hot and fresh.
