Yield 2 crusts

Number Of Ingredients 4

2 cups all-purpose flour
1 tsp. salt
16 Tbs. (2 sticks) cold unsalted butter, cut into cubes
8 oz. cream cheese, at room temperature, cut into cubes

Steps:

  • In a food processor, combine the flour and salt and pulse briefly to mix. Add the butter and cream cheese and pulse until the mixture just starts to come together. Transfer the dough to a work surface, divide into 2 equal portions and press each portion into a flat disk. Use 1 or both dough disks immediately, or wrap in plastic wrap for future use (see note above). Makes 2 pastry dough disks.

Tips:

  • For the best results, use high-quality cream cheese that is at room temperature.
  • Make sure to mix the cream cheese and butter until they are completely smooth and creamy.
  • If the dough is too sticky, add a little more flour. If the dough is too dry, add a little more cream cheese or butter.
  • Chill the dough for at least 30 minutes before using.
  • When rolling out the dough, use a lightly floured surface to prevent sticking.
  • Be careful not to overwork the dough, as this can make it tough.
  • For a flaky crust, fold the dough in half several times before rolling it out.
  • Bake the pie crust in a preheated oven for the best results.

Conclusion:

Cream cheese pie dough is a delicious and versatile dough that can be used to make a variety of pies and tarts. It is easy to make and can be made ahead of time. With a few simple tips, you can make a perfect cream cheese pie dough every time.
