4 cups Brussels sprouts
3 cups chicken stock
6 tablespoons butter
3 tablespoons flour
2 cups milk
1 pinch nutmeg
1/2 cup heavy cream
2 drops Tabasco sauce (or more if preferred)
salt and pepper

  • Trim tough outer leaves if sprouts and put and X in each stem.
  • Drop sprouts into boiling chicken broth and simmer until tender, about 10-15 minutes.
  • Blend sprouts in a food processor, reserving cooking liquid.

1 quart boiling water
2 tablespoons glace de viande
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
1 cup light cream

  • Trim the brussels sprouts of any loose or yellowing leaves and cut a cross in the stem end of each one. Add them to the quart of boiling water and cook for exactly 7 minutes. Remove from heat, drain and run under cold water to stop the cooking.
