Steps:
- While bringing a large pot of water to a boil, cut up cauliflower into florets.
- Add to boiled water and bring back to a boil then reduce heat to medium and simmer for 15 minutes or tender.
- Drain.
- Place all ingredients in a food processor , cover and process until smooth and well blended.
Tips:
- Choose the right cauliflower: Look for a cauliflower head that is compact and heavy, with tightly packed florets. Avoid heads that have any brown spots or blemishes.
- Trim the cauliflower properly: Cut off the tough outer leaves of the cauliflower and remove the core. Then, cut the cauliflower into florets of equal size.
- Steam the cauliflower until tender: Steaming is the best way to cook cauliflower for creamed cauliflower. It helps preserve the cauliflower's nutrients and flavor. Place the cauliflower florets in a steamer basket over a pot of boiling water. Cover the pot and steam the cauliflower for 5-7 minutes, or until it is tender.
- Make a flavorful roux: A roux is a mixture of butter and flour that is used to thicken sauces. For creamed cauliflower, make a roux by melting butter in a saucepan over medium heat. Then, whisk in flour and cook for 1-2 minutes, or until the roux is golden brown.
- Add milk or cream to the roux: Gradually whisk milk or cream into the roux until you reach the desired consistency for your creamed cauliflower. Be sure to whisk constantly to prevent lumps from forming.
- Season the creamed cauliflower to taste: Add salt, pepper, and other seasonings to taste. You can also add grated cheese, cooked bacon, or chopped herbs for extra flavor.
- Serve the creamed cauliflower immediately: Creamed cauliflower is best served hot or warm. It can be served as a side dish or as a main course. Leftovers can be stored in the refrigerator for up to 3 days.
