1 cup milk
2 tablespoons all-purpose flour
2 tablespoons butter
¼ teaspoon salt
1 dash ground black pepper
1 medium head cabbage, shredded
1 cup grated Romano cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, blend milk, flour, butter, salt and pepper. Stir constantly until a thick white sauce has formed.
  • In a separate medium saucepan over boiling water, steam cabbage until tender but firm.
  • In a small baking dish, alternate layers of sauce, cabbage and Romano cheese.
  • Bake approximately 30 minutes, until sauce and cheese are bubbly.

1 small head green cabbage (about 2 1/2 pounds), cored and shredded (10 cups)
3 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups warm whole milk
1/4 cup plus 1 tablespoon finely grated Pecorino Romano cheese (1/2 ounce)
1 tablespoon finely grated lemon zest (from 2 lemons)

Steps:

  • Preheat oven to 350 degrees. Bring 1 inch salted water to a boil in a Dutch oven or large pot. Add cabbage. Cover, and steam, stirring occasionally, until tender, about 5 minutes. Drain, and let cool slightly. Squeeze out excess water using a kitchen towel.
  • Melt butter in a medium saucepan over medium heat. Stir in flour, and cook until bubbling but not browning, 1 to 2 minutes. Slowly whisk in milk. Cook, stirring, until sauce is thick enough to coat the back of a wooden spoon, about 2 minutes. Remove from heat; add 1/4 cup cheese and the lemon zest. Immediately fold cabbage into sauce. Season with salt and pepper.
  • Spoon mixture into a shallow (6-cup) casserole dish. Sprinkle with remaining tablespoon cheese. Bake until bubbling, 30 to 35 minutes. Let stand for 5 minutes before serving.

4 bacon strips
1 tablespoon all-purpose flour

2 teaspoons salt, plus more to taste
4 tablespoons unsalted butter
1 shallot, peeled and minced
1 1/2 teaspoons celery seed
1 cup heavy cream

  • Trim both red and green cabbages, discarding tough outer leaves and core. Slice into 1/4-inch-thick slices. Bring a large stockpot of water to a boil; add 2 teaspoons salt. 1 medium napa cabbage (about 1 3/4 pounds)
1/4 cup evaporated milk (plus)
2 tablespoons evaporated milk
1 tablespoon cornstarch or 1 tablespoon potato starch
2 tablespoons peanut oil
1/4 teaspoon salt
2 slices fresh ginger
1/3 cup chicken broth or 1/3 cup homemade chicken stock
2 -3 tablespoons chopped ham
pepper, to taste

Steps:

  • Remove the tough outer stems from the cabbage and cut off the core. Wash remaining stems and drain. Cut the stems crosswise into 1-inch pieces, discarding the upper leaves.
  • In a large saucepan or a wok, bring enough water to cover the cabbage to a boil. Boil the cabbage for 1 minute and drain in a colander. Pat the cabbage dry with paper towels. (If using a wok to boil the cabbage, dry the inside and outside with paper towels).
  • In a small bowl, whisk the cornstarch into the evaporated milk.
  • Preheat the wok and add the oil. When the oil is hot, add the salt and ginger slices. Add the cabbage and cook for a minute, until the cabbage is heated through. Discard the ginger.
