Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

1 (12 1/2 ounce) can water-packed albacore tuna, drained and flaked
1/2 cup Italian dressing or 1/2 cup simple vinaigrette
1 cup celery, chopped
1/2 cup green onion, thinly sliced
1/2 cup green bell pepper, chopped
4 English muffins, split and toasted
2 avocados, cut crosswise into 1/2 inch thick slices
1 1/2 cups fontina or 1 1/2 cups swiss cheese, shredded

Steps:

  • Mix all ingredients thru bell pepper; divide between the 8 muffin halves.
  • Top each sandwich with avocado and then cheese.
  • Place muffins on baking sheet and broil until cheese is hot and bubbly.

Tips:

  • Choose ripe avocados. Ripe avocados will be dark green or black in color and will yield to gentle pressure. Avoid avocados that are hard or have brown spots.
  • Use a good quality tuna. Canned tuna comes in a variety of grades, so be sure to choose a brand that you trust. Look for tuna that is packed in water or olive oil, and avoid tuna that is packed in oil. Rinse the tuna well before using.
  • Use freshly grated cheese. Freshly grated cheese will melt more smoothly and evenly than pre-shredded cheese. If you don't have a grater, you can use a food processor to grate the cheese.
  • Don't overcook the melts. The tuna melts should be cooked just until the cheese is melted and bubbly. Overcooking will make the tuna dry and tough.
  • Serve the melts immediately. Tuna melts are best served immediately after they are made. The bread will become soggy if you let them sit for too long.

Conclusion:

Creamy avocado tuna melts are a quick and easy meal that is perfect for a weeknight dinner. They are also a great way to use up leftover tuna. With a few simple ingredients, you can create a meal that is both delicious and satisfying. So next time you're looking for a quick and easy meal, give these creamy avocado tuna melts a try. You won't be disappointed!
