- Soak Beans overnight, with plenty of water above the beans. They soak it up!
- In the morning, drain the beans, cover with water, add 1 tsp salt and cook until slightly tender -- 20-30 minutes. However, you must watch these babies, because they have a big tendency to boil over!Just bring them to a boil (watching them), then lower the heat --- and still watch them!
- After the beans are cooked, drain again and rinse them under hot water, and place them in a lightly sprayed or greased (oleo) casserole dish.
- Dab Butter over beans; mix "lightly"! or they get squishy.
- Stir in Molasses.
- Finally, pour in sour cream and mix "tenderly".
- Bake at 350 for one hour. (again, keep an eye on them, I don't think I usually bake them for and entire hour).

REALLY DELICIOUS LIMA BEANS
Steps:
- In a skillet, heat the bacon over moderate heat. When partially rendered, add the olive oil. When the oil is hot add the onions, cover and cook for 15 minutes or until really tender. Add the garlic, tomato, tomato puree, and hot chili pepper and simmer, uncovered, for 5 minutes. Add the lima beans, cover and simmer for 15 minutes or until they have had a chance to absorb the flavors. Season to taste with salt and pepper and serve with grilled Italian sausages or breakfast sausages.
A WHOLE NEW WAY TO ENJOY LIMA BEANS
Steps:
- Cook the lima beans in boiling salted water as directed on the package. If using canned lima beans, you will not need to add salt.
- Add sugar (if using) to the cooking water.
- Drain the beans well. At this point, the beans are still hot.
- Add the cream and butter to the hot beans. Taste and add salt and pepper as desired.
- Serve beans warm.

- Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
- Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
- Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

- Cook lima beans in 1/2 cup water.
- Salt and pepper and butter to taste.
- Cook for 10 to 20 minutes until tender.
- Meanwhile, heat up 1 tablespoon butter; saute onion until transparent.
- Stir in tender lima beans. I think you could use canned butter beans here.( i used the dried limas cooked in crockpot and divided into4 different dishes and frozen for later this one must eat 1st cause of the sour cream ).
