Number Of Ingredients 12

2 Tablespoons extra virgin olive oil
2 Tablespoons minced garlic
1 medium onion (diced)
2 medium leeks (chopped)
2 parsnips (peeled, cored, and chopped)
1 1/2 pounds broccoli (trimmed and chopped)
2 teaspoons finely chopped fresh thyme
2 teaspoons finely chopped fresh marjoram
5 cups chicken stock (or vegetable stock)
2 cups packed spinach
2 teaspoons freshly grated lemon zest
1 cup coconut milk

Steps:

  • In a large soup pot, heat oil over medium heat. Add onions, leeks, and garlic and sauté until softened.
  • Add the next five ingredients to the pot. Bring to a boil, then reduce to a simmer and cook until broccoli and parsnips are soft, about 15 minutes. Stir in spinach and lemon zest.
  • Remove from heat. Using a submersion blender, puree soup carefully until very smooth. Alternatively, you can do this in batches in a blender, being careful because the soup is very hot.
  • Return to low heat and stir in the coconut milk. Season to taste with salt and pepper. Heat through and then serve.

Time 15m

Number Of Ingredients 7

1.1 pounds broccoli, florets and stalk (roughly chopped *see Instructions)
3.53 ounces spinach
2 garlic cloves (chopped)
1 onion (chopped)
2 tablespoons olive oil
3-3½ cups vegetable stock (hot)
Pepper to taste

Steps:

  • *Prepare the broccoli rice by cutting off the broccoli stalk, slicing off the tough outer layer and chopping the stack roughly, along with the florets before adding into the blender. Blitz until the mixture becomes crumbly (not mushy) Avoid overcrowding the blender and make broccoli rice in batches if you have to.
  • Dissolve the stock cubes in the hot water.
  • In a large pot heat up the oil, add the garlic and onion and fry over a medium heat for 2 minutes, stirring often. Add the broccoli rice and continue cooking for 5 minutes, stirring often. Add the spinach, pour in 3/4 of the stock, cover and bring to a boil, then simmer for 3 more minutes. Puree the soup, add the remaining stock if necessary, adjust the seasoning (I only added some pepper) and enjoy!
