nonstick cooking spray
1 onion, thinly sliced
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
2 cups fresh okra, cut into 1/2 inch slices
1 whole boneless, skinless chicken breast, cubed
1 tablespoon Cajun seasoning
1 pound whole cooked crawfish, peeled
¼ cup butter
2 tablespoons all-purpose flour
3 cups milk
⅓ cup half-and-half cream
1 pinch salt
3 cups shredded Cheddar cheese
1 cup freshly grated Romano cheese
⅓ cup chili powder
1 tablespoon ground paprika

Steps:

  • Spray a heavy bottom pot with cooking spray, and place over medium heat. Saute onion, green bell pepper, red bell pepper and okra until soft. Season with a pinch of Cajun seasoning. Remove from pot, and set aside.
  • Coat pot with cooking spray (turn off flame while spraying), and return to medium high heat. Saute chicken until no longer pink, and juices run clear. Season with 1 tablespoon Cajun seasoning. Stir in crawfish, and cook for 1 minute. Remove from pot, and set aside with vegetables.
  • Melt butter in pot on medium low heat. Whisk in flour until roux begins to bubble. Add milk, and whisk until smooth. Add half-and-half, and whisk continuously until mixture thickens enough to coat the back of a spoon. Add a pinch of salt. Stir in shredded Cheddar cheese a little at a time until well incorporated. Add grated Romano cheese and whisk until incorporated. Season with chili powder and paprika. Stir in chicken, crawfish and vegetable mixture. Simmer for 5 minutes.

1 tablespoon olive oil
8 ounces smoked andouille sausage, diced (1 1/2 cups)
1/4 cup all-purpose flour
1 teaspoon Cajun seasoning
3 cloves garlic, finely chopped
2 bell peppers, red and/or green, chopped (about 2 1/2 cups)
1 onion, chopped (about 1 1/2 cups)
One 8-ounce bottle clam juice
One 15-ounce can diced tomatoes
1 pound firm white fish, such as halibut, grouper or black sea bass, cut into 1 1/2-inch pieces
1 pound peeled and deveined large shrimp (21 to 25 shrimp)
2 tablespoons chopped fresh parsley leaves
Kosher salt
Cooked white rice, for serving

Steps:

  • 1. Heat the oil over medium-high heat in a large pot or Dutch oven. Cook the sausage until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the Cajun seasoning, garlic, peppers and onions and continue to cook until the vegetables are softened, 5 minutes. Add the clam juice, tomatoes and 4 cups water, scraping up any browned bits from the bottom of the pot, and increase the heat to bring to a simmer.
  • 2. Lower the heat slightly and simmer until the stew is thickened and the flavors are melded, about 30 minutes. Gently stir in the fish and shrimp. Cook, making sure the stew is not bubbling vigorously, stirring once or twice, until the shrimp and fish have just turned opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt and serve over rice.

3 onions, chopped
2 bell peppers, chopped
3 stalks celery, chopped
3 lbs crawfish tails, rinsed and drained
3 garlic cloves, chopped
1 tablespoon parsley, chopped
1/2 cup flour
1 pint half-and-half
1 lb Velveeta Mexican cheese, cubed
12 ounces fettuccine
1 (8 ounce) bag shredded Mexican blend cheese

Steps:

  • Prepare fettuccine according to package directions and set to side.
  • Saute onions, bell pepper and celery in butter until tender.
  • Add crawfish and simmer 10 minutes.
  • Stir in garlic, flour, half and half and parsley.
  • Reduce heat to low and simmer 30 minutes.
