Time 2h

Yield 4 servings

Number Of Ingredients 14

3/4 cup dried chickpeas, soaked in water overnight
1/2 teaspoon sea salt
2 imported bay leaves
3 tablespoons extra virgin olive oil, plus more for garnish
1/2 cup chopped onion
1 tablespoon chopped prosciutto
1 tablespoon minced celery
3/4 cup farro or hulled barley, rinsed, then soaked in water overnight
1 quart chicken broth
1/2 teaspoon dried marjoram
2 pinches freshly grated nutmeg
Kosher salt
Freshly ground black pepper
Freshly chopped flatleaf parsley, for garnish

Steps:

  • Drain chickpeas, and place in a medium earthenware pan or saucepan. Cover with plenty of cold water, and bring to a boil. Add sea salt and bay leaves. Reduce heat, and cook, covered, until very soft, about 1 1/2 hours.
  • Meanwhile, in a medium saucepan, heat olive oil and gently cook onion, prosciutto and celery for 4 to 5 minutes, stirring occasionally, until they are soft but not brown. Drain farro, and add it along with the chicken broth, marjoram and nutmeg to the onion mixture. Cook, partially covered, for about 1 hour.
  • Drain chickpeas, reserving the cooking liquid. Discard bay leaves. In a food processor, puree chickpeas with 1 cup of the reserved liquid. Add pureed chickpeas to the farro mixture; if necessary, add more of the cooking liquid from the chickpeas to achieve the consistency of a creamy soup. Adjust the seasoning with salt and pepper. Wait 10 minutes before serving, and sprinkle each portion with chopped parsley and a drizzle of olive oil.

Yield 6 bowls

Number Of Ingredients 11

4 1/2 tablespoons canola oil, divided
3/4 cup diced shallots (2 medium)
1 tablespoon minced garlic
2 tablespoons minced fresh ginger
2 cans (15 oz. each) chickpeas (garbanzos), drained and rinsed
5 cups reduced-sodium chicken or vegetable broth
1 teaspoon kosher salt
6 cups packed spinach leaves (from about 10 oz. bunch spinach, rinsed well and stems trimmed)
1 1/4 teaspoons curry powder
1 1/2 tablespoons lime juice
2 tablespoons small whole or chopped fresh mint leaves

Steps:

  • 1. Heat 3 tbsp. oil in a medium pot over medium heat and add shallots. Cook, stirring occasionally, until softened and translucent, about 5 minutes. Add garlic and ginger and cook until aromatic, about 1 minute more. 2. Add chickpeas, broth, and salt. Cover and bring to a boil. Reduce to a simmer and cook until flavors are well blended and chickpeas are very soft, about 25 minutes. Add spinach and cook just until softened and bright green, about 2 minutes. Let cool 5 minutes. 3. Meanwhile, heat remaining 1 1/2 tbsp. oil in a small frying pan over medium-low heat. Stir in curry powder and cook until aromatic, 30 seconds. Remove from heat. 4. Whirl half of soup at a time in a blender, starting on low speed, until very smooth. Ladle into bowls. Just before serving, stir lime juice into curry oil and drizzle over soup. Garnish with mint.

Tips:

  • Use canned chickpeas: Canned chickpeas are a convenient and time-saving option. Be sure to rinse and drain them well before using.
  • Soak dried chickpeas overnight: If you prefer to use dried chickpeas, soak them in water overnight before cooking. This will help them to soften and cook more quickly.
  • Use a variety of vegetables: Don't be afraid to experiment with different vegetables in your soup. Some good options include carrots, celery, onions, garlic, and spinach.
  • Add some herbs and spices: Herbs and spices can help to add flavor and depth to your soup. Some good options include cumin, coriander, paprika, and cayenne pepper.
  • Serve with a side of bread or salad: Creamy chickpea soup is a hearty and filling meal. Serve it with a side of bread or salad to complete the meal.

Conclusion:

Creamy chickpea soup is a delicious, healthy, and easy-to-make meal. It's perfect for a quick lunch or dinner. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying soup that the whole family will enjoy.
