Pasta with Asparagus and Prosciutto image

Provided by Food Network Kitchen

Time 25m

Yield 4 servings

Number Of Ingredients 11

Kosher salt
1/2 cup diced prosciutto (about 3 1/2 ounces)
1 clove garlic, chopped
2 teaspoons chopped fresh thyme
1/2 cup dry white wine
Freshly ground pepper
1 cup heavy cream
Pinch of freshly grated nutmeg (optional)
12 ounces fettuccine
1 1/2 pounds asparagus, tough ends trimmed, cut into 1/2-inch pieces
1/4 cup grated parmesan cheese, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Cook the prosciutto in a large skillet over medium-high heat until it renders some fat and begins to brown, about 2 minutes. Add the garlic and thyme and cook until the garlic just begins to soften, about 30 seconds. Remove the skillet from the heat and add the wine. Return to the heat and cook until the wine evaporates slightly, about 2 more minutes. Add 1/4 teaspoon salt and pepper to taste. Add the cream and nutmeg and cook, stirring occasionally, until the sauce thickens slightly, about 3 more minutes.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs, adding the asparagus during the last minute of cooking. Reserve 1/2 cup cooking water, then drain the pasta and asparagus.
  • Add the cheese to the cream sauce and stir to combine. Add the pasta and asparagus and toss to coat, adding some of the reserved cooking water to loosen, if needed. Season with salt and pepper. Divide among bowls and top with more cheese.

Provided by champ

Categories     Pork Recipes

Time 30m

Yield 3

Number Of Ingredients 11

½ bunch asparagus, trimmed and cut into 1/2-inch pieces
1 cup frozen peas
¼ cup water
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups whole milk
2 teaspoons garlic powder
1 cup freshly grated Parmesan cheese
1 pinch salt and ground black pepper to taste
4 ounces dry fettuccine pasta
1 (1 ounce) slice prosciutto, cut into thin strips

Steps:

  • Combine the asparagus, peas, and water in a saucepan over medium heat. Cover the saucepan and cook until the vegetables are beginning to become tender, yet retain some crispness, about 5 minutes; drain any remaining liquid and set the vegetables aside.
  • Melt the butter in the saucepan over medium-low heat. Stir the flour into the butter until combined, 2 to 3 minutes. Add the milk, raise heat to medium and cook, whisking frequently, until the mixture thickens, another 2 to 3 minutes. Stir the garlic powder and Parmesan cheese into the sauce; season with salt and pepper. Set aside.
  • Bring a pot of lightly salted water to a boil. Cook the fettuccine in the boiling water until the pasta is cooked yet firm to the bite, about 8 minutes; drain and return the fettuccine to the pot. Stir the vegetables, the sauce, and the prosciutto into the fettuccine.

Tips:

  • Choose the right asparagus. Look for asparagus spears that are bright green, firm, and have tightly closed tips. Avoid spears that are limp, woody, or have yellow or brown spots.
  • Prepare the asparagus properly. Wash the asparagus thoroughly and trim off the tough ends. Cut the asparagus into 2-inch pieces.
  • Cook the asparagus until it is tender-crisp. You can cook the asparagus in boiling water, in a steamer, or in a sauté pan with a little bit of olive oil. Cook the asparagus for just a few minutes, until it is bright green and tender.
  • Don't overcook the fettuccine. Cook the fettuccine according to the package directions, but be careful not to overcook it. Overcooked fettuccine will be mushy and unpleasant to eat.
  • Use high-quality ingredients. The better the ingredients you use, the better your fettuccine will taste. Use fresh asparagus, peas, and prosciutto. Also, use a good quality Parmesan cheese.
  • Serve the fettuccine immediately. Fettuccine is best served immediately after it is cooked. This will prevent the pasta from becoming dry and sticky.

Conclusion:

This creamy fettuccine with asparagus, peas, and prosciutto is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The asparagus and peas add a fresh and springy flavor to the dish, while the prosciutto adds a salty and savory flavor. The creamy sauce is rich and flavorful, and it coats the fettuccine perfectly. This dish is sure to please everyone at your table!
