Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Yield Serves 8 to 10

Number Of Ingredients 8

4 pounds baby Yukon Gold potatoes
1 tablespoon plus 2 teaspoons kosher salt
1/2 cup cider vinegar
1 tablespoon sugar
1 pound bacon, cut into 1/2-inch pieces
2 small white onions, finely diced (about 1 cup)
2 cups beef broth
1/2 cup chopped fresh flat-leaf parsley

  • Peel potatoes, and place in a large pot with enough water to cover by several inches. Bring to a boil over high heat, add 1 tablespoon salt, and reduce to a gentle boil. Cook until potatoes are tender when pierced with a knife, about 10 minutes.
  • While the potatoes cook, combine the vinegar, sugar, and remaining 2 teaspoons salt in a small saucepan, and place over medium heat until the sugar is dissolved.
  • Drain potatoes into a colander. Using gloves or paper towels to protect your hands, slice the hot potatoes into 1/8-inch-thick rounds. Drizzle with hot vinegar mixture, gently stirring until all potatoes are coated. Set aside.

Drain excess fat from skillet, leaving a thin coating in bottom. Add onions; saute until translucent but not browned.

Tips for Creamy German Potato Salad:

- Choose the right potatoes. Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes when boiled, making them ideal for this salad. - Boil the potatoes until they are tender but still firm. If you overcook them, they will become mushy and the salad will not be as good. - Cool the potatoes completely before adding the dressing. This will help the dressing to adhere to the potatoes and will also prevent the salad from becoming too watery. - Use a good quality mayonnaise. The mayonnaise is the main ingredient in the dressing, so it is important to use a good quality one. Look for a mayonnaise that is made with fresh eggs and oil. - Add some mustard. Mustard adds a nice tang to the dressing. You can use either yellow mustard or Dijon mustard. - Use fresh herbs. Fresh herbs, such as parsley and chives, add a lot of flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but they will not have as much flavor. - Taste the dressing before adding it to the potatoes. Make sure that the dressing is to your liking. You can adjust the amount of mayonnaise, mustard, and herbs to suit your taste. - Serve the salad warm or cold. This salad can be served warm or cold. If you serve it warm, the flavors will be more pronounced. If you serve it cold, the salad will be more refreshing.

Conclusion:

Creamy German potato salad is a delicious and versatile dish that can be served as a side dish or as a main course. It is also a great dish to take to potlucks or picnics. With a few simple tips, you can make a creamy German potato salad that is sure to impress your friends and family.
