Time 16m

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt
1 tablespoon olive oil
1 pound chorizo
3 cloves garlic, minced
1 small yellow onion, diced
1 cup jarred sliced roasted bell peppers
1 cup frozen fire-roasted corn
One 4-ounce can chopped green chiles
1 1/2 cups cream
1/2 cup chicken stock
One 1-pound package refrigerated gnocchi
1 cup grated Monterey Jack cheese
2 tablespoons salted butter
2 green onions, sliced thin

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the chorizo, garlic and onion and cook until the chorizo is cooked through, 5 to 8 minutes. Drain any excess grease if needed.
  • Add the roasted bell peppers, corn and green chiles. Stir to combine. Add the cream and stock and bring to a boil. Allow the sauce to thicken slightly while you cook the gnocchi.
  • Drop the gnocchi into the boiling water and stir. Cook briefly, about 1 minute; the gnocchi will float to the top when ready. Using a slotted spoon, transfer the gnocchi to the sauce, then toss to combine.
  • Remove the skillet from the heat and add the cheese and butter. Continue to toss until the cheese has melted and everything has come together. Serve garnished with sliced green onions.

Tips:

  • Use fresh ingredients. High-quality ingredients will make a big difference in the flavor of your dish. For the best results, use fresh chorizo, peppers, and gnocchi.
  • Don't overcrowd the pan. When cooking the chorizo and peppers, make sure to give them plenty of space in the pan so that they can brown properly. If you overcrowd the pan, the chorizo will steam instead of fry and the peppers will become soggy.
  • Cook the gnocchi until it is al dente. Gnocchi is a type of pasta that is made from potato dough. It is important to cook it until it is al dente, which means that it is still slightly firm to the bite. If you overcook the gnocchi, it will become mushy.
  • Use a creamy sauce. The creamy sauce in this recipe is made from a combination of heavy cream, Parmesan cheese, and white wine. It is the perfect complement to the savory chorizo and peppers.
  • Garnish with fresh herbs. Before serving, garnish the dish with fresh herbs such as basil, parsley, or thyme. This will add a pop of color and flavor.

Conclusion:

Creamy gnocchi with chorizo and peppers is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of savory chorizo, sweet peppers, and creamy sauce is sure to please everyone at the table. So next time you're looking for a quick and tasty dinner, give this recipe a try!
