If you like simple pasta salads you should try this. I love this in the summer but you could have this any time. I didn't see any other recipes like this that used both dressings so I thought I'd share mine. They really do go well together. This is pretty versatile and you can add any veggies that you'd like.

1 (12 ounce) package tri-color spiral pasta (or pasta of your choice)
1 cup Italian salad dressing (I like good seasons)
1 cup caesar salad dressing
1 cup grated parmesan cheese
1 medium tomatoes, seeded and diced
1 medium cucumber, peeled and diced
1 green bell peppers or 1 red bell pepper, seeded and diced

Steps:

  • Cook pasta as directed, rinse with cold water and drain well.
  • In a large bowl, combine rest of ingredients and toss to coat.
  • Add pasta and toss to coat.
  • Chill at least 2 hours before serving.
  • *** If pasta "absorbs" the dressing, you may need to add a little more dressing after chill time before serving.

1 ½ cups medium chunky salsa
1 cup mayonnaise
½ cup sour cream
1 (16 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexican-style corn with red and green peppers, drained
½ cup chopped red bell pepper
2 green onions, sliced thin
1 (4.25 ounce) can sliced black olives, drained
½ teaspoon garlic powder
½ teaspoon ground cumin, or to taste
½ teaspoon dried cilantro, or to taste
1 teaspoon salt
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a rolling boil; cook the rotini in the boiling water until the pasta is cooked through yet firm to the bite, about 8 minutes. Drain. Rinse under cold running water until completely cooled; drain thoroughly.
  • Whisk the salsa, mayonnaise, sour cream, black beans, Mexican-style corn, red bell pepper, green onions, black olives, garlic powder, cumin, cilantro, salt, and pepper together in a large bowl; add the cooled pasta and stir to coat evenly. 1/2 cup evaporated milk {4oz}
1/4 cup extra-virgin olive oil {1.75oz}
4 oz. crumbled feta or queso blanco
1/2 cup fresh cilantro leaves
1 lime, juiced
Salt and freshly ground black pepper
1 cup finely diced ham
1 orange bell pepper, chopped
1 red bell pepper, chopped
1 cup frozen peas
1/2 small red onion, thin slice
1/2 cup peeled, chopped jicama
1/2 cup pimento stuffed olives

Steps:

  • Bring a large pot of salted water to a boil. Add pasta, stir with a wooden spoon and cook until tender but not mushy, about 10 minutes. Drain, place in a large bowl and set aside. While the pasta cooks, combine evaporated milk, oil, feta, cilantro, lime juice and some salt and pepper in a blender. Puree until the dressing is smooth and creamy.
