CREAMY LEMON POPPY SEED DRESSING

Creamy Lemon Poppy Seed Dressing image

Pour this dressing over fruit salads or salads with fresh berries.

Provided by Lynnda Cloutier

Categories     Dressings

Number Of Ingredients 7

3/4 cup plain yogurt
3 tbsp. honey
minced zest of 1 lemon
2 tbsp. fresh lemon juice
1 tbsp. poppy seeds
1/4 cup vegetable oil
salt to taste

Steps:

  • 1. Mix yogurt, honey, zest, lemon juice and poppy seeds in a food processor or blender.
  • 2. With machine running, drizzle in oil til dressing is mixed. Season dressing with salt. Makes 8 servings, or 1 cup

Tips:

  • For a brighter, tangier dressing, use freshly squeezed lemon juice. You can also add a teaspoon of lemon zest for extra flavor.
  • Use high-quality olive oil for the best taste. Extra virgin olive oil is a good choice.
  • If you don't have shallots, you can use a small yellow onion instead. Just be sure to mince it very finely.
  • To make a vegan version of the dressing, use silken tofu instead of sour cream. You can also use almond milk or soy milk instead of heavy cream.
  • If you want a thicker dressing, add more sour cream or heavy cream. You can also whisk in a teaspoon of cornstarch or flour until the desired consistency is reached. For a thinner dressing, add more lemon juice or water.
  • Taste the dressing before serving and adjust the seasonings to your liking. You may want to add more salt, pepper, or lemon juice depending on your preference.

Conclusion:

This creamy lemon dressing is a versatile and delicious condiment that can be used on a variety of dishes. It's perfect for salads, grilled chicken, fish, or vegetables. The creamy texture and bright lemon flavor make it a favorite for many people.
